Mediterranean Chicken Bowl with a Garlic aioli Sauce✨ You know that I love a good chicken and rice bowl, and this Mediterranean chicken bowl with garlic aioli sauce might be one of my favorites!👇🏻 Ingredients: • 1.5lb boneless chicken thighs • Juice of half a lemon • 1 tbsp Greek yogurt • 1 tbsp olive oil @getgraza • 2 tbps paprika • 1 tsp Italian herbs, garlic powder, chili powder, black pepper, salt For the rice: • 1 cup of basmati rice • 2 cups of chicken broth @betterthanbouillon • 1 tsp turmeric • Drizzle of olive oil For the garlic aioli sauce: • 2 tbsp avocado mayo @primalkitchenfoods • 3 tbsp Greek yogurt @chobani • 3 garlic cloves • 2 tbsp fresh chives • Salt and pepper to taste • 1 tbsp lemon juice • 1-2 tbsp water (if needed, depending on consistency, wait until the end) For the salad: • 1 Roma tomato, diced • Handful of chopped lettuce • 1 tbsp lemon juice • Salt and pepper to taste Optional: sumac to garnish (highly recommended) and chopped parsley Instructions: 1. In a small pot, heat olive oil over medium high heat, add turmeric and stir for 30 seconds. 2. Add the rice, chicken broth and salt if needed. Bring to a boil, reduce the heat to low and cook for 10-15 minutes or until ready. 3. In a bowl, marinate de chicken thighs with seasonings listed above, Greek yogurt, lemon juice and olive oil. The longer you marinate the chicken, the better. If you don’t have time, just cook it right away. 4. Heat a pan over medium high heat, drizzle avocado oil. Add the chicken and cook for 6-8 minutes until golden and cooked through. 5. In a bowl, toss the lettuce, diced tomatoes, season with lemon juice, salt and pepper. 6. In a blender, add the avocado mayo, Greek yogurt, garlic cloves, fresh chives, salt and pepper. Blend until smooth. Adjust seasonings if needed, add water ONLY if needed to reach desired consistency. 7. Assemble the bowl with the turmeric rice as the base, add the chicken, tomato salad, drizzle the garlic aioli and garnish with sumac and parsley.
