Korean-Inspired Pancakes for Pancake Day! 🥞🇰🇷 This year, I wanted to switch things up for Pancake Day, so I made these crispy Korean-style pancakes topped with juicy prawns, fresh spring onions, and coriander—and they were a total flavour bomb! To take them to the next level, I served them with Korean-inspired beansprouts and a rich, umami-packed dipping sauce, both made with gochujang—a spicy, slightly sweet fermented red pepper paste that’s a staple in Korean cooking. It adds a deep, savoury heat that takes these dishes to another level! In Korea, pancakes (jeon) are often enjoyed with banchan—small, flavourful side dishes that complete the meal. I chose to make Korean-inspired beansprouts, a quick and delicious side that pairs perfectly with the crispy pancakes. ✨ Full recipes below – makes 4 pancakes! Korean-Style Prawn Pancakes Ingredients: ✔️ 1 bunch spring onions (thinly sliced) ✔️ 150g pack cooked & peeled prawns (drained & patted dry) ✔️ 6g fresh coriander (chopped) ✔️ 2 tbsp oil ✔️ 130g plain flour ✔️ 260ml cold water ✔️ 2 medium eggs (whisked) ✔️ 1 tsp salt ✔️ ½ tsp garlic granules ✔️ ½ tsp chilli powder ✔️ ½ tsp ground black pepper Method: 1️⃣ Mix the spring onions, prawns, and coriander together. 2️⃣ In a bowl, combine flour, garlic granules, chilli powder, salt, and black pepper. Add the whisked eggs and water, then mix to form a smooth batter. 3️⃣ Heat some oil in a non-stick frying pan, ladle in a quarter of the batter, then sprinkle over a quarter of the prawn mixture, pressing it gently into the batter. 4️⃣ Cook for around 5 minutes until the bottom is golden and crisp, then flip and cook for another 3 minutes. 5️⃣ Keep warm while you cook the rest. Korean-Inspired Beansprouts Ingredients: ✔️ 300g beansprouts ✔️ 1 tbsp sesame oil ✔️ 1 tbsp gochujang paste ✔️ 3 garlic cloves (crushed) ✔️ ½ tbsp soy sauce ✔️ 1 spring onion (chopped) Method: 1️⃣ Heat a pan over medium heat and add sesame oil. 2️⃣ Add the spring onions and garlic, cooking for 1 minute. 3️⃣ Stir in the beansprouts, soy sauce, and gochujang paste. 4️⃣ Cook for 3-4 minutes, stirring well. Pancake Dipping Sauce Ingredients: ✔️ 60ml soy sauce (I used naturally brewed Kikkoman reduced salt) ✔️ 1.5 tbsp rice vinegar ✔️ 1 tbsp sesame oil ✔️ 1 tbsp sesame seeds ✔️ 1 tbsp gochujang paste Method: Simply mix all ingredients in a bowl—done! 🥢 Pair with your favourite banchan (Korean side dishes) for a full experience! 🔖 Save this post for later and check out my other reels for more pancake recipes!
