Tinned Fish Talk Ep. 12 🎣 Pinhais Spiced Sardines $6

10/10 ⭐ The Magnum Opus

Taste 🔟 I have yet to come across a more perfect balance of spice and fish flavor. The iconic spices of clove, laurel, chili, black pepper, and cucumber make this tin stand up on its own. I can devour it as is without any condiments. The olive oil used is refined olive oil, which has a neutral taste, unlike extra virgin. It doesn’t carry the sometimes greasy or “off-tasting” fishiness because the sardines are not cooked in the can. The fat and liquid don’t seep into the can and the fish flavor is best described as pure.

Texture 🔟 The texture is plump and firm enough not to fall apart. It’s juicy and holds up for a perfect bite. The bones soften during cooking so they are unnoticeable. To top it all off, the hand inspection quality control at each stage of production ensures you’ll get perfect sardines every single time. The level of consistency is admirable.

Price 🔟 Sure, there are more expensive sardines from Ramon Pena or La Brujula but Pinhais/Nuri still stands up to them at half the price. I’d pay several bucks more because it’s truly a marvelous handmade product from a century-old artisanal process. Every time I open a can it feels like an occasion for celebration or like an awe-inspiring visit to a museum.

I asked them why they have 2 brands, and one conclusion was that Pinhais is too difficult for foreigners to pronounce.

Taste 🔟 The classic Pinhais/Nuri spices are perfect in my mind. Chili, clove, cucumber, laurel, black pepper, and carrot create a perfectly warm flavor that doesn’t completely overpower the fish. I did find this slightly spicier and less fishy than the regular 3/5 size spiced sardines. The flavor is not too fishy and perfectly seasoned.

Texture 🔟 Texture has to be the main difference between these and the regular size version. The smaller sardines are more delicate. These are a tad bit softer, less fatty, and less meaty. They still hold together beautifully until they melt into a delicious tender bite in your mouth. I prefer these to the regular size for pairing with a cracker, but I imagine the larger ones would be more satisfying as a meal served atop rice or toast.

Price 🔟 At €6 I find the price very fair for the quality of the product. Every tin is packed and wrapped by hand. The fish are presented without any visual flaws. The taste and texture of this brand are by far my favorite at this price point.

Where to Buy 🛒 The bad news is these smaller Pinhais sardines are not available in the US to my knowledge. The 3-5 size spiced sardines are available as both Pinhais and Nuri, they’re identical. Lent-Friendly Sardine Tostadas🐟🔥

Get ready for a zesty, spicy twist that’ll make you wonder why you ever doubted sardines in the first place 😏

Don’t worry, no one’s judging you...except maybe your taste buds, after they get a taste of this 🤤

🫵🏽What you need🫵🏽

2 La Sirena sardines in spicy tomato sauce (save the sauce from one tin)
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
1/2 tsp salt (or to taste)
1/2 tbsp salsa maggi
1/3 cup chopped red onion
2-3 roma tomatoes, diced
1 jalapeño, diced (seeds removed for less heat)
2-3 celery stalks, diced
1 cup cucumber, diced (seeds removed)
1/2 cup chopped cilantro
3/4 cup freshly squeezed lemon juice
Crispy tostadas, slathered in mayo
Sliced avocado for topping

Prepare the Sardines: Remove the bones (if you’re that picky) and break up the sardines in a bowl. Don’t be shy—get in there 🤭

Season Like a Pro: Add garlic powder, onion powder, black pepper, salt, and salsa maggi.

Mix it all up—this is where the magic happens 🪄

Veggie Vibes: Toss in the chopped red onion, roma tomatoes, jalapeño, celery, cucumber, and cilantro. 🌿

Stir it all together until you’re convinced it’s an art form 🎨🖌️

Lemon Zing: Pour in the fresh lemon juice and give it one last stir. Let it sit in the fridge for 10-15 minutes—because good things come to those who wait 🧘🏽‍♀️

Assemble: Slather mayo on your crispy tostadas, pile on the sardine mix, and top with creamy avocado slices. You’re done—but if you’re feeling fancy, throw on some extra cilantro 😮‍💨

Sardines might be the underdog of Lent, but once you try this, they’ll be the MVP of your menu 😉
