AVOCADO CORN SALAD I’m a firm believer that eating your veggies in dip form is superior Ingredients 2.5 16 ounce bags of frozen fire roasted corn (can also use 3 cans of canned corn) 2 red bell peppers 2 jalapeños 1 shallot 2 avocados 3/4 cup low fat feta cheese 3 tbsp light mayo Juice of 1.5 limes Salt to taste 1 tsp garlic powder Optional: 1/4 cup pumpkin seeds Instructions 1. Cook corn according to package instructions, I heated mine on the stovetop. Set aside to cool. If using canned corn, drain and rinse and set aside. 2. Prep all your veggies by chopping into small pieces, my veggie chopper is on my stories! 3. Add corn, bell pepper, jalapeno, shallot, avocado and feta to a large bowl. Then add mayo, lime, salt, and garlic powder. Toss until everything is well combined, adjust salt according to preference. Then mix in pumpkin seeds. 4. Enjoy on its own, with tortilla chips, on top of rice cakes, with some chicken for a complete meal, the options are endless. 5. Add in olive oil 1 tbsp at a time while whisking. Crispy Chicken: -butterfly your chicken breasts and pat dry -coat in flour, shaking off any excess -coat in whisked egg, letting any excess drip off -coat in bread crumbs (I use panko bread crumbs and add some salt, pepper, garlic powder, onion powder, and parmesan cheese) -coat again in egg -coat again in bread crumbs -heat up some vegetable oil in your skillet over medium high. Once it is hot enough, add your chicken cutlets.
