Blue Zones Longevity Soup This Minestrone soup was inspired by @Dan Buettner and the @Blue Zones @Netflix documentary Live to be 100. Meal prep for the week with this easy one pot soup 🥣 The daily intake of people living in the Blue Zones is about 95% vegetables 🥕 Did you that adding a cup of beans a day can add up to two to three years onto your life 🫘 This type of dish is a staple in all the 5 Blue Zone communities, it’s a nutrient-rich bowl of goodness that high in fiber and packed with antioxidants and flavor, perfect for a any season. INGREDIENTS VEGETABLE MINESTRONE * 1 cup of black beans * 1 cup of kidney beans * 1 cup of navy beans * I cup of sweetcorn * 7 tablespoons of extra-virgin olive oil * I cup of chopped white or yellow onion * 3 medium carrots peeled and chopped * 3 medium celery stalks chopped * I cup of fennel chopped * 2 leeks sliced * 5 mushrooms sliced * 4/5 garlic cloves minced * 8 medium tomatoes chopped or use canned crushed tomatoes * I sweet potato chopped * 1/2 cup loosely packed fresh Italian flat-leaf parsley leaves * 1/2 cup fresh basil leaves * 6/8 cups of vegetable broth * 2 tablespoons of tomato paste * 2 bay leaves * Salt and pepper to taste * Teaspoon of each, tumeric, oregano, Italian seasoning or seasonings to your taste. * Coriander and avocado for toppings DIRECTIONS If you’re using dry beans soak them in water overnight and rinse and drain in the morning. Start by sautéing the garlic and onions in olive oil until clear over a medium heat. Add the celery and carrots stirring often for about 5 minutes. Stir in the tomatoes, fennel, leeks and whatever other veggies you’ve chosen as well as the beans. Add enough water/stock to cover 6/8 cups so that everything is submerged by 1 inch plus all your herbs and seasonings. (Add salt at the end). Raise the heat to high and bring it to a full boil, lower the heat and simmer for about 40 minutes to one hour, until the beans are tender. TIP If you want a stronger tomato flavor then add 2 tablespoons of tomato paste when sautéing the onions. TIP Use the stalks and fronds that come off the fennel bulb for the most intense flavor. Blue zone inspired minestrone soup🍲🌍 * 2 tablespoons olive oil * 3/4 cup onion diced * 1/2 cup celery sliced * 1/2 cup carrots peeled and chopped * 1 zucchini quartered and sliced * 2 teaspoons minced garlic * salt and pepper to taste * 1 14 ounce can diced tomatoes * 4 cups vegetable broth * 1/4 cup tomato paste * 2 teaspoons Italian seasoning * 1 15 ounce can white beans drained and rinsed * 1 15 ounce can kidney beans drained and rinsed * 1/2 cup frozen cut green beans * 1/2 cup small whole grain pasta * 2 cups baby spinach or kale * 2 tablespoons chopped parsley * Heat the olive oil in a large pot over medium high heat. Add the onion, celery, carrots and zucchini to the pot.
* Cook the vegetables for about 3-5 minutes. Add the garlic and cook for 30 seconds. Season the vegetables with salt and pepper.
* Add the tomatoes, vegetable broth, tomato paste and Italian seasoning to the pot. Bring to a simmer.
* Add the white beans, kidney beans, green beans and pasta to the pot. Simmer for 10-15 minutes or until pasta and vegetables are tender.
* Season the soup with salt and pepper to taste. Stir in the spinach or kale and cook for 2-3 minutes. * Sprinkle the parsley over the soup and enjoy!

the blue zone documentary is my new roman empire 💙 heres the soup i made (vegan & gluten free) inspired by the Sardinian minestrone: Ingredients: Carrots Onion Celery Garbanzo beans 28oz crushed tomatoes Brown rice pasta 2 containers of vegetable broth Spinach Seasonings: Salt Pepper Oregano Rosemary Sage Thyme Garlic powder Onion powder Nutritional yeast Hot sauce (optional) Recipe: 1. Prepare the pasta according to package and set aside. 2. Heat up the onions, carrots, and celery on medium heat until they are soft. 3. Add rinsed garbanzo beans and all of the seasonings you want to use. Cook for a few minutes. 4. Add the crushed tomatoes and let simmer for around 5 minutes. 5. Add the veggie broth and bring the pot to a boil. 6. Add spinach to the pot and mix until the spinach is soft. 7. Stir in the cooked pasta and cook for a few minutes. I was so inspired by Blue Zones on Netflix, especially by the foods eaten in Okinawa. Purple potatoes have been one of my favorite foods for a long time, they genuinely taste SO good that the benefits are really just a plus. Some facts ⬇️ ⚫️ Purple potatoes have 4x the antioxidants as white potatoes ⚫️Heart healthy ⚫️Prevents disease ⚫️Can lower blood pressure & blood sugar ⚫️Contain more potassium than bananas! ⚫️High in fiber I enjoy purple potatoes best after peeling then boiling them, slicing into cubes, then topping with lemon and sea salt. Here I paired them with: 🟣Crispy tofu - toss cubes from 1 block of extra firm tofu with avocado oil spray, a splash of tamari, and 2 tbsp corn starch.
