For the brioche buns: 2 ½ cups strong bread flour 2 tbsp sugar 1 tsp salt 1 tbsp instant yeast ½ cup warm milk 2 large eggs (1 for dough, 1 for egg wash) ¼ cup unsalted butter, softened Sesame seeds for topping Refrigerate dough overnight, cut and shape buns the next day, let them proof, then bake. For the burger patties: 500g beef, minced 1 tbsp Worcestershire sauce 1 tsp pepper 1 tsp garlic powder 1 tsp onion powder 1 tbsp olive oil Salt to taste For the spicy Sriracha mayo: ½ cup mayonnaise 2 tbsp Sriracha sauce 1 tsp lime juice 1 clove garlic, finely chopped Toppings: Grilled pineapple slices Lettuce Tomato slices Hand-cut fries: 3 large potatoes, sliced Salt for seasoning 1 tsp dried basil 1 tsp dried oregano 1 tsp dried thyme Vegetable oil for frying Blanch fries, fry once, then fry a second time until crispy.
