Cheesy Beef and Potato Burritos won’t disappoint! INGREDIENTS 3 large potatoes olive oil + salt, pepper, garlic powder (for potatoes) 1 lb ground beef 1/2 tsp each of salt and pepper 2 tsp of chili powder 1 tsp each of cumin, dried cilantro, and paprika 1/2 cup of water 1 tbsp minced garlic Nacho cheese Burrito size flour tortillas Taco sauce INSTRUCTIONS Peel, wash, and cut up potatoes into small cubes. Toss them with olive oil, salt, pepper, paprika, and garlic powder in a large bowl (I don’t use exact measurements for this part). Cook the potatoes in the air fryer at 400 degrees for about 25 minutes shaking them around at least a couple times while they cook. Once the potatoes are cooking add 2 lb of ground beef to a large skillet over medium-high heat. Season with salt, pepper, chili powder, cumin, dried cilantro, and paprika (you could also just use a taco seasoning packet instead of these seasonings). Drain any extra grease if needed once the beef is fully cooked. Add about 1/2 cup of water and stir. The ground beef can stay in the skillet on low heat until the potatoes are crispy. Lay out a large tortilla and add some nacho cheese, a scoop of the ground beef, some taco sauce, a scoop of the crispy potatoes, and top it with a little bit more nacho cheese. Roll the burrito up. Cheesy Chicken Taco Mac is an easy one pan dinner! INGREDIENTS 1 lb of chicken breast, cut into cubes 1 tbsp oil 1 onion, chopped 1/2 tsp salt and pepper 2 tsp chili powder 1 tsp each of cumin and dried cilantro 1 1/2 cups of chicken broth 2 1/2 cups of elbow macaroni 10 oz can of Rotel (not drained) 8 oz can tomato sauce 1 tbsp minced garlic 2 cups of shredded Colby Jack cheese 1/2 cup of milk Fresh cilantro INSTRUCTIONS Heat a large skillet over medium-heat. Add 1 tbsp of oil, the chicken, and a chopped onion. Season with salt, pepper, chili powder, cumin, and dried cilantro. Once the chicken is pretty much cooked through, add the minced garlic, elbow macaroni, chicken broth, Rotel, and a can of tomato sauce. Stir everything together well and bring to a quick boil. Once you see bubbles, turn the heat down to medium low. Cover with a lid and cook for about 12 minutes or until the pasta is cooked. Stir at least once about half way through to keep the pasta from sticking to the skillet. Finally, add the shredded cheese and milk, stir, and let sit until the cheese is melted. My meal prep from this week!! Suuuuuper simple, yet delicious 🫶🏼🤸🏼♀️🥦🏋🏼♀️✨🐓 For lunches I made a teriyaki chicken bowl with jasmine rice and mixed veggies! For the easy crockpot chicken : -Chicken breast -Garlic, garlic, powder, onion powder, paprika, salt, pepper, and teriyaki sauce ( I tried out G Hughes sugar-free and loved it!)
