In a large bowl, mix together meatball ingredients: beef, sausage, breadcrumbs, parmesan cheese, egg, parsley, garlic powder, and salt. Using about 2 tsp of meat, roll into mini meatballs and set aside. 2. Heat a saucepan over medium-high heat and add 1 tbsp olive oil. Once hot, add meatballs and cook for about 5-6 minutes total, turning frequently to make sure all sides are cooked. Use a slotted spoon to transfer to plate after done cooking. 3. Chop and prepare all veggies. 4. Heat a large dutch oven over medium-high heat and add remaining 2 tbsp oil. Once hot, add onion, carrots, and celery. Cook for about 5 minutes or until veggies have began to soften. Add garlic and spices, and cook another 2 minutes. 5. Pour in chicken broth and water and stir until combined. Add in meatballs and pasta. Bring to a boil. Once boiling, reduce heat to medium and let simmer for 15 minutes. After pasta is fully cooked and has been simmering, turn off heat and add in spinach. We make something very similar in my region, Abruzzo! I also discovered that in Naples they prepare a soup called “zuppa maritata,” which translates exactly to “wedding soup.” In Abruzzo, we use “cardo” (cardoon) as a vegetable and call our version “cardone.” It’s usually eaten on its own, without pasta, but we often add tortellini or, as I did today, quadrucci. For the soup: - Decent glug of olive oil - 3/4 large yellow onion, diced - 3-4 stalks celery, halved lengthwise and sliced - 3-4 carrots, peeled and diced - 4 cloves garlic, minced - 1 Tbsp Italian seasoning - 1 cup tiny pasta (ditalini, orzo, acini di pepe if you want it to be authentic) - 6-8 cups chicken stock - Salt and pepper measured w/ your heart - Juice of 1 lemon - 1 small bunch flat-leaf Italian parsley, chopped - Many handfuls of baby spinach or other dark leafy green of choice - Parmesan cheese, for topping .
