My MIL is called Bożenna and she is an amazing cook. She is currently living with us so I’m trying to document as many recipes as I can so I can keep the Polish traditions alive in our household for my kids ♥️
Kotlety Mielony 🇵🇱
(Ground Cutlets)
Makes around 9-10
A favourite dish in Polish households…very popular with kids and is requested here in our house frequently.
It’s worth adding that an egg is usually added to bind the mixture but since we have a child with an egg allergy, I left it out and they still turned out great!
Ingredient:
* 500g Pork Mince (traditionally taken from the shoulder)
* Stale bread soaked in milk (I used 6 slices of stale sliced pan here)
* 1 egg (not in video because we omitted it as explained above)
* 1 large white onions, finely diced and sautéed in a pan with a little oil and butter and seasoned very well with salt and ground black pepper
* 1.5 tsp of salt
* 1 tsp ground black pepper
* Dried Breadcrumbs (we used traditional Polish breadcrumbs called Bułka Tarta but panko would would here too if you can’t get your hands on it)
What to do:
- Preheat your oven or airfryer to 200 °C (400 °F)
- Break up your bread and soak your in enough milk so the bread soaks it all up and becomes a sort of mush.
- Add this to the pork mince, along with the well seasoned and sautéed onions, salt and pepper.
- Mix well with your hand and form into patties.
- Coat each patty in your fine breadcrumbs and fry them up in a pan ensuring they turn golden on each side but are not cooked.
- Pop them on to a lined banking tray and finish the cooking off in the oven or airfryer.
- Mine took 10 mins in the airfryer but I’m guessing in an oven, they might cook for 12-15 mins. Internal temp should be 71.1 °C (160 °F).
- Serve with potatoes that have been boiled in very salty water, buraczki (shredded hot beetroot with lemon, sugar, flour, butter) or a creamy cucumber salad called Mizeria (finely chopped cucumber with sour cream, vinegar, sugar, salt and pepper)
- You will love this…
