Aloo Ki Bhujia
2 lbs red potatoes, sliced
1 medium onion, diced
1/2 cup oil
1 teaspoon cumin seeds
.5 teaspoon Nigella seeds
1 teaspoon salt or to taste
1 teaspoon coriander powder
1 teaspoon red chili powder, use less for mild
1 teaspoon red chili flakes, use less for mild
1/2 teaspoon turmeric
splash of water
green chili and cilantro for garnish
Instructions:
Thinly slice the potatoes and add them to cold water and set a side.
Peel and dice the onions.
Heat the oil to a pan and add cumin and nigella seeds sauté for 10 to 15 seconds.
Add the onions and sauté until translucent.
Add the potatoes and stir fry until they get a little color.
Add in all the spices and sauté for 30 seconds then add a splash of water cover and simmer on low for 10 minutes.
Garnish with cilantro and chopped chilies and enjoy with a paratha or puris.
