2lbs of beef Ribs

4 Guajillo, chiles
1 pasillo
3 garlic
2 tomatoes
Half onion
1 tablespoon of paprika powder
1 tablespoon of chili powder
1 tablespoon of onion powder
1 tablespoon of garlic
1 tablespoon of oregano
1 tablespoon of cumin seeds
Salt and black to your liking
1 cup chili water
Tortillas I used are @Mission Foods
Monterey Jack Cheese

Notes:
Cut your meat into square pieces. Add all your seasonings that I have listed above once done. Set it aside. Roast your tomatoes and your dry chiles for about five minutes. Add one cup of water. Let that boil for four Minutes. One done, add Everything To The Blender With Your 1 tablespoon of oregano, and your 1 tablespoon of cumin seed salt and pepper to your liking.

🥒HIGH PROTEIN CHICKEN SALAD CUCUMBER ROLLS.

If you are tight on time but still want to eat a ridiculously good high protein meal, checkout this chicken salad. I ate it as cucumber rolls and these were amazing.

Here is how to make it:

1. Start with 1lb of cooked, shredded chicken (I just shredded 4 cooked chicken breasts, but rotisserie works too). Shred with two forks or thinly dice it up.
2. Finely dice 1/2 a red onion and soak it in 2 cups of water for 10 minutes to mellow the flavor, then drain and add to a bowl.
3. Chop a handful of fresh cilantro, cube 1 avocado, and toss both into the bowl.
4. For the dressing, blend together: 5 tbsp cottage cheese, 3 tbsp mayo, 1 tbsp onion powder, juice of 3 limes, a handful of cilantro, a generous couple pinches salt, and pepper. Taste and adjust seasoning.
5. You can eat this on its own, in bread, a lettuce wrap—or roll it up in cucumbers like I did.

Here is how to roll it up:
6. Thinly slice a large English cucumber using a peeler.
7. Lay the slices on parchment paper, slightly overlapping by about 1/3.
8. Pat the cucumber dry with a paper towel.
9. Spread 2 tbsp of whipped cream cheese over the cucumbers.
10. Add 4oz of the chicken mix at the bottom, leaving space on all sides. Top with some onion and avocado slices.
11. Roll it up tight—start from the bottom, fold over the toppings, and continue to roll carefully, pressing down to pack it nice and tight.
12. Slice the roll with a sharp knife, then top with everything bagel seasoning and chipotle hot sauce.

🍽️ Rollos de Lasaña de Pollo Alfredo ✨Guarda esta receta y etiqueta a quien la necesite✨ INGREDIENTES Pollo: 2 pechugas de pollo grandes (cortadas en filetes) ½ cdta de sal ¼ cdta de ajo en polvo ⅛ cdta de pimienta negra 1 cda de aceite de aguacate Relleno de Espinacas: ⅓ taza de cebolla picada 1 diente de ajo picado 3 tazas de espinacas frescas Pizca de sal 2 cda de queso crema light ½ taza de mozzarella rallada Salsa Alfredo: 2 cda de mantequilla sin sal 2 dientes de ajo grandes picados 1½ tazas de crema espesa ⅔ taza de parmesano rallado ½ cdta de sal ¼ cdta de pimienta negra Armado: 5 wraps Egg Life® (sabor original) ½ taza de mozzarella rallada (para gratinar) Perejil fresco picado INSTRUCCIONES 1. Cocinar el pollo: Sazona los filetes con sal, ajo en polvo y pimienta. Calienta el aceite en un sartén a fuego medio-alto. Sella el pollo 3-4 minutos por lado hasta dorar ligeramente y cocinalo un poco menos de lo que usualmente lo haces. Corta en cubos pequeños. 2. Preparar relleno: En el mismo sartén, saltea la cebolla y 1 diente de ajo hasta ablandar. Añade espinacas con una pizca de sal. Cocina hasta marchitar. Mezcla con pollo, queso crema y ½ taza de mozzarella. 3. Salsa Alfredo: Derrite mantequilla en el sartén. Añade el ajo restante y saltea 1 minuto. Incorpora crema espesa, parmesano, sal y pimienta. Cocina a fuego lento 3-4 minutos hasta espesar. 4. Armar rollos: Corta los wraps Egg Life® por la mitad. Coloca dos mitades verticalmente (traslapando ligeramente). Unta 2-3 cda de mezcla de espinacas y pollo en cada wrap. Enrolla firmemente y coloca con la unión hacia abajo en un refractario. 5. Hornear: Vierte salsa Alfredo sobre los rollos. * 2 large potatoes, peeled and diced
* ½ teaspoon onion powder
* ½ teaspoon paprika
* ½ teaspoon kosher salt
* ¼ teaspoon freshly ground black pepper
* 1/4 teaspoons chili powder
Ranchero Sauce:
* 4 large Roma tomatoes
* 1 small jalapeño, seeded and stemmed
* ¼ small white onion
* 3 large garlic cloves
* ½ teaspoon oregano
* ¼ teaspoon ground cumin
* ½ teaspoon kosher salt
* ¼ teaspoon freshly ground black pepper
* 1 teaspoon of Knorr Tomato with Chicken Flavor Bouillon @knorr

Notes: Cooked the meat for 5-8 minutes added the potatoes let that cooking for 5 minutes blended your sauce then add it to the pan let that simmer on low for 10 mins taste for salt .
