MY VIRAL SUMMER ROLL with @Sivan’s Kitchen The original video reached over 37M views on IG & 13M here on TikTok, so you know we had to recreate it! Sivan was the first person to reach out to me and invite me into her kitchen when I posted about coming to LA, and I couldn’t be more grateful!!! We had the best time filming together and the recipe turned out so beautifully! You absolutely NEED to try it🫵🙂‍↕️ Ingredients for 2 giant summer rolls: 6 rice paper sheets 2 large iceberg or romaine lettuce leaves 1 cucumber 1 carrot 1/8 head of red cabbage 1 red bell pepper 1 avocado Small bunch cilantro and mint For the sauce: ⅓ cup peanut butter 2 tbsp soy sauce (or tamari for a gluten-free option) 2 tbsp rice vinegar 1 tbsp sesame oil Juice from 1-2 limes First, prepare the sauce to ensure the summer rolls are served fresh. Combine the peanut butter, soy sauce (or tamari), rice vinegar, sesame oil, and lime juice in a bowl. Mix well and set aside. Next, julienne the cucumber and carrot, shred the cabbage, and thinly slice bell pepper and avocado. To assemble the rolls, dip three rice paper sheets in cold water for about 10 seconds, then lay them on a work surface so they overlap in the center. Work quickly to prevent the rice paper from tearing. Place a lettuce leaf in the center of the rice papers, then layer the sliced vegetables on top. Start folding by bringing the bottom edge towards the center, followed by the sides, and then roll upwards tightly, similar to wrapping a burrito. Ensure the roll is fully sealed, and if needed, wrap it with an additional rice paper sheet. Repeat the process one more time to make the second summer roll. So thank you to both of these lovely ladies for sharing their talents 🌱Spicy Garlic Parm Tofu Skewers🌱 Ingredients: 1 block extra firm tofu , cut into cubes 2 tbsp olive oil 2 tsp paprika 1 tsp garlic powder 1 tsp onion powder 1/2 tsp salt 1/2 tsp pepper Sauce: 1 stick vegan butter 8 tbsp 1 tbsp sriracha 2 tsp crushed red pepper 8-10 cloves garlic, minced 1/2 cup fresh parsley chopped 1/4 cup nutritional yeast 1/4 cup vegan Parm Before you start, make sure to soak your wooden skewers in water for at least 30 minutes or use metal skewers. Slice your tofu into approximately 1 inch cubes and add the tofu to a bowl. Add the spices and oil and toss to coat well. Place about 5-6 pieces of tofu on each skewer. Air fry the tofu at 400° F for about 5 minutes Heat a small pan over medium heat. Add the butter and let it melt a bit. Add the hot sauce, Red pepper, garlic , cheese, nutritional yeast and parsley, cook for 1 to 2 minutes Spread a layer of the sauce on the tofu and air fry at 400° F for another 5 minutes Flip the tofu over add dome sauce to the other side and air fry at 400° for 5 minutes more Remove the tofu from the air fryer and add a final coating of the sauce . Crispy Black Bean Tacos with @Eat Figs Not Pigs 🤗 #veganrecipes INGREDIENTS: • 1 (15-ounce) can of black beans, drained and rinsed • 4 cloves garlic • 1 chipotle in adobo sauce, optional • 1 tsp each: cumin, ancho chili powder • ½ tsp each: salt, pepper, garlic powder • ¼ tsp cayenne powder, optional • Vegetable oil, for frying • 6 tortillas • ½ cup shredded cheese • Shredded lettuce • Salsa or Pico de Gallo • Fresh lime wedges, for serving, optiona Place the black beans, garlic, chipotle pepper, and seasonings in a food processor, and pulse until smooth. Taste and adjust seasonings, if necessary. Spread a few tablespoons of the black bean mixture into each tortilla, followed by 1 to 2 tablespoons of the cheese. Fold in half and set aside. Heat a couple teaspoons of the oil in a large nonstick skillet over medium heat. Working in batches, fry the tacos until golden and crispy, 2 to 3 minutes per side. Fill each taco with lettuce and serve with your favorite salsa and fresh lime wedges, and enjoy!
