Maple pecan doughnuts! These delicious vegan baked doughnuts are the perfect winter dessert or afternoon snack alongside a cup of coffee! Ingredients (serves 6): - 1 cup (125g) plain flour - 1/2 cup (100g) caster sugar - 1 tsp baking powder - 1/2 tsp salt - 1/2 cup (100ml) oat milk - 1 tbsp butter - 1 1/2 tbsp applesauce - 1 tsp vanilla extract - 1 tsp maple syrup - 1/4 cup (50g) pecans For the maple icing: - 1/2 cup (90g) icing sugar - 1 tbsp maple syrup - 1 tbsp oat milk Method: STEP 1 Preheat the oven to 180C. STEP 2 In a large mixing bowl, combine the flour, caster sugar, baking powder, and salt. STEP 3 Melt the vegan butter in a mug in the microwave for 25 seconds. Once melted, add to the mixing bowl along with the oat milk, applesauce, vanilla extract & maple syrup. STEP 4 Place the whisk attachment onto the Cordless Pro Hand Blender. Press the blue light & the power button. Begin whisking the mixture until a smooth batter has formed. STEP 5 Lightly spray the doughnut tin with some cooking spray. Divide the mixture between the doughnut tin (this serves 6, but the mixture could stretch to 7-8 depending on how big you want the doughnuts to be). STEP 6 Add the mini chopper attachment to the Cordless Pro Hand Blender. Pour in the pecans & pulse the chopper until the pecans are chopped into tiny pieces. Be careful you don’t chop them too fine as this is what gives them a lovely texture. STEP 7 Sprinkle the pecan pieces on top of the doughnuts before placing into the oven for 15 mins (or until golden). STEP 8 Once their cooked, allow them to cool in the tin for 10 mins before placing them on a cooling rack. STEP 9 Make the maple icing by adding the icing sugar, maple syrup & oat milk to a bowl. Mix until smooth. You may need to add more milk if the mixture is too thick, or more icing if the mixture is too thin. STEP 10 Drizzle the icing on top of each doughnut & enjoy!
