Summer pasta✨ . ▪️3/4 Cup Pine Nuts▪️2 Medium Tomatoes, diced small▪️2 Cups Fresh Basil Leaves, sliced▪️6 oz. Parmesan, cut in tiny squares▪️4 Garlic Cloves, grated▪️3/4 Cup Olive Oil▪️1/2 tsp Kosher Salt▪️1/4 tsp Pepper▪️1 lb. Linguini▪️Freshly Grated Parmesan, for serving▪️ . 🌱Vegan Modification: Sub in 1/2 cup nutritional yeast for parmesan (or plant based cheese) . 1️⃣ Toast pine nuts in a dry pan over medium heat, stirring constantly; once they start to get golden brown remove them from the pan (they will burn easily) 2️⃣ In a large bowl mix together the pine nuts, tomatoes, basil, Parmesan, garlic, and olive oil, salt, and pepper; let sit for at least an hour for flavors to combine 3️⃣ Bring a pot of heavily salted water to a boil and cook your linguine until al dente (or to your liking) 4️⃣ Drain the pasta and mix it with the sauce; top with freshly grated parm and enjoy! . ⏲20 minute prep time + 1 hour inactive time + 10 minute cook time . Elote Pasta Salad 🌽 We didn't expect this one to come out as delicious as it did, but WOW did it blow us away. Next time we're grilling some chicken to add to this, but it's delicious as is! Full recipe below: 1 lb rotini pasta 1 cup sour cream ¼ - ½ cup mayo Juice from 1 lime Tajin seasoning, to taste (about 1-2 tsp) 1 tsp chili powder 1 tsp cumin 1-2 cloves garlic, grated 1-2 tbsp olive oil (depending on desired thickness) Salt, to taste ½ cup red onion, diced 12 oz frozen fire roasted corn, defrosted (can also heat up in a pan with some butter) ¼ cup cilantro, chopped 1 cup cotija cheese, crumbled 1. Cook your pasta in heavily salted water until al dente. Drain and set aside. Toss with olive oil to prevent sticking. 2. In a large mixing bowl, combine your sour cream, mayo, lime juice, tajin, chili powder, cumin, grated garlic, olive oil, and salt. Whisk to combine. 3. Add in your cooled pasta directly into the bowl and mix to fully coat. 4. Add in your red onion, corn (save a few tbsp for topping), cilantro, and cotija cheese. Toss to combine. 5.
