QUICK SPICY MISO RAMEN 🍜 Broth I used 2 cups soy milk 2 cups of chicken broth Dash of soy sauce Dash of half and half For the Flavored Oil 1/2 cup extra virgin olive oil 3 thin ginger slices 2 cloves garlic, crushed 1 1/2 Tbsp gochugaru (Korena red pepper flakes) (you can substitute to regular red pepper flakes or thai chili flakes) 2 Tbsp Katsuobushi aka bonito flakes For the Spicy Miso Tare 1/2 cup yellow miso (mix of red and white miso paste) 2 Tbsp Toban djang, chili bean paste 1/2 cup sake 1/2 cup mirin 🔸Flavored oil: In a sauce pan, combine all the ingredients for the flavored oil and let it infuse the flavors over low heat for 8 to 10 minutes. Remove from heat and let it cool. Drain the flavored oil into a separate bowl and set the clean oil aside. 🔸Tare: In another sauce pan, combine all the ingredients for the spicy miso tare and whisk until smooth. Bring it to boil over medium high heat and let it keep boil for 2 to 3 minutes. Remove from heat and set aside. 🔸Broth: All ingredients for broth into a pot. It is done when it has reached a boil. 🔸When you are ready to serve the ramen, bring a pot of water to boil to cook ramen noodles and bring the broth to boil. Cook the ramen noodles by following the package you’re using. Drain completely. 🔸In a serving bowl, add 1/4 cup of spicy miso tare, 1 Tbsp flavored oil and 2 cups of boiling hot broth. Adjust tare to broth ratio to your taste preference. Add the cooked noodles into the bowl and stir- so the noodles will coated evenly with the broth. Spicy Miso Ramen 425cal, 25g protein, 4g fiber Ingredients: • 2.5 cups Bone Broth
 • 1 piece Kombu (seaweed strip)*
 • 1/4 cup Miso paste
 • 1 tablespoon Gochujang (Korean chili paste)
 • 1 tablespoon Sesame Oil
 • 1 tablespoon Soy Sauce
 • 1 teaspoon grated Ginger
 • 1 teaspoon grated Garlic
 • Splash of Oat Milk (or coconut milk/heavy cream/regular milk)
 • Egg White Noodles (or noodles of choice)
 • Frozen Edamame
 • Frozen Corn
 • Snap Peas
 • Sliced Radish
 • Crispy Airfried Tofu*
 • Soft Boiled Egg*
 • Sautéed Shiitake Mushrooms
 *Kombu is optional but adds a wonderful depth of flavor! I’ve found mine in Walmart, Whole Foods, & local Asian grocery stores. Serving Size: 2 servings Instructions: 0. Warm up bone broth in a pan with a piece of kombu seaweed strip.
 0. Make Miso Paste: • In a small bowl, combine miso paste, gochujang, sesame oil, soy sauce, grated ginger, and grated garlic, whisking to make a paste
 0. Add Paste to Broth: • Once the bone broth is warm, add the miso paste to the broth.
 0. Add Oat Milk: • Add a splash of oat milk to the broth for creaminess. Adjust the amount according to your preference.
 0. Cook Noodles: • Cook egg noodles separately according to package instructions or in the broth for the last few minutes of cooking until they reach your desired doneness.
 0. Prepare Toppings: • While your broth cooks, prepare your toppings: microwave your edamame and corn, slice your radish, chop your snap peas, airfry your tofu, prepare your soft-boiled egg and saute shiitake mushrooms.
 0. Assemble Ramen Bowls: • Divide the cooked noodles between two serving bowls.
 • Ladle the spicy miso broth over the noodles.
 0. Add Toppings: • Top the ramen with your desired toppings, such as edamame, chopped snap peas, sliced radish, crispy airfried tofu, soft-boiled egg, optional spinach, and sautéed shiitake mushrooms.
 *For crispy airfried tofu, spray with avocado oil, season with salt and airfry at 420 for 15 minutes on one side, flip and airfry for another 5-6 minutes or until desired crispiness *For the perfect, jammy soft boiled egg, boil your egg for 6 minutes, and immediately transfer to a ice-water bath (bowl with ice and cold water) peel
