Spicy Miso Ramen 425cal, 25g protein, 4g fiber Ingredients: • 2.5 cups Bone Broth
• 1 piece Kombu (seaweed strip)*
• 1/4 cup Miso paste
• 1 tablespoon Gochujang (Korean chili paste)
• 1 tablespoon Sesame Oil
• 1 tablespoon Soy Sauce
• 1 teaspoon grated Ginger
• 1 teaspoon grated Garlic
• Splash of Oat Milk (or coconut milk/heavy cream/regular milk)
• Egg White Noodles (or noodles of choice)
• Frozen Edamame
• Frozen Corn
• Snap Peas
• Sliced Radish
• Crispy Airfried Tofu*
• Soft Boiled Egg*
• Sautéed Shiitake Mushrooms
*Kombu is optional but adds a wonderful depth of flavor! I’ve found mine in Walmart, Whole Foods, & local Asian grocery stores. Serving Size: 2 servings Instructions: 0. Warm up bone broth in a pan with a piece of kombu seaweed strip.
0. Make Miso Paste: • In a small bowl, combine miso paste, gochujang, sesame oil, soy sauce, grated ginger, and grated garlic, whisking to make a paste
0. Add Paste to Broth: • Once the bone broth is warm, add the miso paste to the broth.
0. Add Oat Milk: • Add a splash of oat milk to the broth for creaminess. Adjust the amount according to your preference.
0. Cook Noodles: • Cook egg noodles separately according to package instructions or in the broth for the last few minutes of cooking until they reach your desired doneness.
0. Prepare Toppings: • While your broth cooks, prepare your toppings: microwave your edamame and corn, slice your radish, chop your snap peas, airfry your tofu, prepare your soft-boiled egg and saute shiitake mushrooms.
0. Assemble Ramen Bowls: • Divide the cooked noodles between two serving bowls.
• Ladle the spicy miso broth over the noodles.
0. Add Toppings: • Top the ramen with your desired toppings, such as edamame, chopped snap peas, sliced radish, crispy airfried tofu, soft-boiled egg, optional spinach, and sautéed shiitake mushrooms.
