This one isn’t as high in protein as usual, if you want to bulk it up fold in some chopped extra firm tofu as well. Catch you next Friday for the next marinated salad drop 🫡 ►Peanut Soba Noodle Salad: 1/2 package Soba Noodles 1/4 small red cabbage 2 carrots 1 red bell pepper 1 large cucumber 1 10 oz bag edamame Peanut Dressing to taste Additional Salt, lime juice, peanuts, chili flakes, sesame seeds (optional/to taste). ►Peanut Dressing 1/2 cup peanut butter 5 tbsp light soy sauce 1/4 cup honey 3 tbsp sriracha 1 garlic clove 1/2 tbsp grated ginger Juice of 1 lime Water as needed to thin Make your dressing, then slowly add into salad until dressed to your liking. Sesame Soba Noodles in 10 minutes Ingredients: * 6 oz of Soba Noodles * 1 tbsp of neutral oil * 2 bunch of green onion, chopped in 1/4-inch pieces and minced * 2 tbsp of toasted sesame seeds Sauce * 3 tbsp of soy sauce * 2 tbsp of toasted sesame oil * 1 tsp of garlic * 1 tsp of ginger * 2 tsp of honey * 1 tbsp of rice vinegar To garnish : * Toasted sesame seeds * Furikakke (optional) Steps: 1. Mix the sauce in a small bowl. Set aside. 2. Chop and mince the green onion. Set aside. 3. Cook your soba noodles according to the package directions. Rinse the noodles with cold water, drain the noodles and set aside. 4. Heat the oil over medium-high heat. Add the chopped green onion and cook until fragrant for 30 seconds. 5. Sesame Miso Soba Noodle Soup 🍜 perfect for when you have the sniffles but also if you’re just craving soup constantly like I am. I love how creamy and umami the broth is, and in my mind soba and sesame are the perfect duo 🫶 Here’s the recipe: (serves 2) 1 tsp oil 3 green onions, whites and green separated, finely sliced 1 tbsp chili crisp oil 100 g mushrooms pinch of salt 3 cloves garlic, minced 3 cups water 3 tbsps sesame paste 1.5 tbsps miso 1/4 cup hot water 1 tbsp sesame oil 2 servings of soba noodles Tofu: 1 tbsp oil 1/2 254g block tofu, sliced into triangles 1 tbsp soy sauce Garnish: Green onion greens, finely sliced Toasted sesame seeds Heat oil in a saucepan over medium heat. Add whites of green onion and sauté for about a minute or so. Then add mushrooms and a pinch of salt and sauté until the mushrooms are lightly golden brown. Add chili crisp and garlic and sauté until fragrant, another 2 minutes or so. Add water to the saucepan and bring to a simmer. Lower the heat and simmer for 5-10 minutes. In the meantime, stir together sesame paste, miso and hot water in a small bowl and cook soba noodles according to package directions. Pour soy sauce over the tofu slices and make sure each side gets coated. Let it marinate for 5-10 minutes. Heat oil in a small pan and fry tofu on each side until golden brown. Remove the broth from the heat and stir in sesame-miso mixture along with sesame oil and the greens of your green onion. Divide noodles between two bowls.
