Recipe by @clairemnolan This SOUTHWEST QUINOA SALAD will be your new favorite! ️ What you need: - 1/2 cup dry quinoa- 1 cup water - 1 cup corn kernels - 1 cup black beans- 1 red bell pepper, diced- 1/2 of a red onion, diced- 1/4 cup cilantro, diced- 1 tbsp olive oil - 2 tbsp lime juice- 1 tsp minced garlic- 1/4 tsp chili powder- 1/4 tsp saltHow to make it: - Add quinoa and water to a pot, cover and bring to a boil. Turn down heat and simmer until water has absorbed, then set aside to cool. - To a mixing bowl add cooled quinoa, corn, black beans, bell pepper, red onion, and cilantro.- Stir together olive oil, lime juice, minced garlic, chili powder and salt. - Drizzle dressing over the salad and toss well.
