10 MINUTE ONE-POT HEALTHY ORZO recipe 🍝 . This is the perfect quick and easy dinner or meal prep that the entire family can enjoy! . Ingredients: 1 tbsp olive oil 3/4c red onion 1tbsp minced garlic 1 can chickpeas rinsed and drained 2c cherry tomatoes 1c diced zucchini 16 oz orzo 5 cups water 1c frozen peas 2c chopped spinach 22oz pre cooked chicken (I used the pollo asado from Just Meats) . Instructions: 1. In a large pot on medium heat, sauté onion, garlic, tomatoes, zucchini and chickpeas for a few minutes. 2. Pour in the orzo and water 3. About halfway through cooking add peas, spinach & chicken 4. This should take about 10 minutes! Taste orzo when the liquid is absorbed and make sure it’s tender to your liking. 5.
