This is without a doubt my BEST protein pancake recipe, the texture and taste are definitely the closest thing to authentic pancakes I’ve ever had! 😋💪 Serves: 1 (6-8 pancakes 🥞) Calories & Macros 📊 Per serve: 456 calories 42g P | 54g C | 8g F Ingredients ✅ - 150g fat free cottage cheese (brand: Lidl) - 1 large egg (brand: chicken) - 60g Self raising flour - 15g vanilla whey protein (@proteinworks do the best😋) - 25ml unsweetened almond milk - Tsp cinnamon - Tsp vanilla extract - Low cal cooking spray Ingredients toppings (optional) ✅ - 25g blueberries - Zero maple syrup (brand: @proteinworks ) - (you can use your own and track the calories and macros accordingly) Method (20 minutes)⏰ 1. add all the ingredients to a blender and blend into a smooth consistency (it should be slightly thinner than normal pancake batter, but not runny like water) 2. Set the stove to high heat and add some low cal cooking. Allow the pan to sufficiently heat up first and then pour a small dollop (ice cream scoop size), and turn the heat to medium-low. 3. Let the pancake cook for 1-1.5 mins until you see bubbles popping on the top, then flip it over and cook for a further minute (no longer). Repeat till the mixture is finished (keep the pan on medium-low, as it will stay hot) 4.
