The BEST Creamy Potato Salad Recipe✨ 5 lbs yukon gold potatoes 1 Tbs pink salt 6 large eggs 1 cup celery, diced 1/2 cup kosher dill pickles, small dice 1/2 medium red onion, small dice 5 stalks of green onion, only chop green parts 1/4 cup fresh dill, chopped 2 cups Best Foods mayonnaise 2 Tbs yellow mustard 1/3 cup pickle juice 1 tsp smoked paprika 1 tsp pink salt, more to taste 1 tsp black pepper 1. Wash and scrub potatoes. Add potatoes to pot and fill with water enough to cover the top of potatoes by 1 inch. Bring to a medium boil and add 1 Tbs salt. Cook until easily pierced with fork, about 15-20 mins (depending on size of potatoes). Boil longer if necessary. 2. Drain water. Allow potatoes to cool completely by laying potatoes on flat surface or place into ice bath to cool. Remove the skins of potatoes (it should easily peel off) by pinching the skin with fingers or use a small knife to help. Chop potatoes into bite size pieces and place into large mixing bowl. 3. Meanwhile, to a pot add eggs and cover with water. Boil on medium for 10 mins. Drain and run the eggs under cold water until cool or place into ice bath. Peel, cut in half and separate yoke from the whites. Roughly chop the whites and set aside. 4. To a bowl add the egg yokes and mash using a fork. To it add mayonnaise, mustard, pickle juice, 1 tsp smoked paprika, 1 tsp salt and 1 tsp black pepper. Mix together. Adjust seasoning to taste. 5. To the potatoes add chopped egg whites, red onion, celery, pickles, dressing, green onion and dill. Stir gently to combine. Taste and adjust the seasoning if needed.
