Mediterranean Chicken Salad I could literally eat this salad every day! it’s that good. The perfect light summer meal. —Chicken marinade— 2 chicken breasts 1/2 cup olive oil 1/4 cup lemon juice 1/2 tablespoon salt 1/2 teaspoon garlic powder or fresh garlic 1/2 teaspoon cumin 1/2 teaspoon coriander 1/2 teaspoon chili flakes 1/2 teaspoon black pepper 1/2 teaspoon oregano 1/4 cup fresh chopped parsley or dried 1 tablespoon lemon zest : —Vinaigrette— The juice of 1 lemon 1 clove garlic 1/4 cup extra virgin olive oil 2 tablespoons red vinegar (white or apple cider) 1/4 teaspoon oregano 1/4 teaspoon salt 1/4 black pepper : —The rest of the Salad Ingredients— Lettuce Hummus Cucumber Tomatoes Kalamata olives Feta cheese Pickled red onions Parsley for garnish : 1. Marinate the chicken- slice each chicken breast horizontally into 2 even pieces . In a bowl mix together the ingredients for the marinade, olive oil, lemon juice, lemon zest, parsley and all the spices. Put the chicken in the marinade make sure it’s covering and let it marinate for a half an hour or overnight. 2. Cook the chicken in a nonstick skillet on medium to high heat for about 5 minutes per side or until the internal temperature is 165°f. Don’t forget to pour the marinade over the chicken as they are cooking. Once done remove from pan and let the chicken rest for 5 minutes before cutting. 3. Make the vinaigrette- mix together all the ingredients for the vinaigrette and set aside. 4. Cut the chicken into bite size pieces along with the rest of the vegetables and ingredients that go in the salad. 5. Start assembling the salad put everything in a large bowl.
