Creamy Thanksgiving Mashed Potatoes 🦃🥔 These are the best mashed potatoes I’ve ever had. Here’s how to make them: - 3lbs yukon gold potatoes - 1/2 - 1 cup high-quality, unsalted butter, room temp (to taste, but a good rule of thumb is adding 1/3 cup butter for every lb of potatoes) - 3/4 cup whole milk, warmed - 2 cloves grated garlic, to taste - 1 (5.3oz) pack @Boursin Cheese - Salt to taste - Sour cream to taste, optional (~1/2 cup) - Chives and butter to garnish 1. Set your milk, butter, Boursin cheese, and sour cream (if using) on the counter to come to room temperature. 2. Score your potatoes width-wise and add them to a pot. Cover with cold water by about an inch, season generously with salt, and bring to a boil. Reduce heat and gently simmer for 25 minutes, or until fork-tender. 3. Drain the potatoes and let sit for 5 minutes to cool slightly. Peel the potatoes and return them to the pot (heat off). Let them sit for 2-3 minutes to dry, ensuring no moisture remains. If needed, turn the heat to low to dry them out without browning. 4. Mash the potatoes through a sieve or ricer and return them to the pot. Add the room-temperature butter a few tbsp at a time. 5. In a separate saucepan, warm the milk. 6. Once all the butter is added, slowly fold in the warmed milk. 7. Add the grated garlic and room-temperature Boursin. Gently fold to combine. 8. Add the salt and sour cream (if using). Taste and adjust seasonings as needed. 9. Serve topped with more butter and fresh chives. My FAVORITE Roasted Garlic Mashed Potatoes for the holidays 🧛🏻🧄🥔
 Ingredients: * 3 lbs Russet or Yukon Gold Potatoes, or both * Salt, for boiling potatoes * 5 Heads of Garlic ( ~50 cloves), peeled * Olive Oil * 2 cups Half and Half * 3 Sprigs of Thyme * 1 Sprig of Rosemary * 6 tbsp Unsalted butter * MSG * 1/2 tsp Black Pepper * Garlic salt (or kosher salt), to taste. 
Instructions:
 1. Pre-heat oven to 300*F.
 2. In a small pot, add garlic cloves and completely submerge with olive oil. Cover with a lid and bake in the oven until garlic is browned and roasted all the way  through ~ 1.5 hours.
 3. When the garlic is done, strain into a heat proof bowl. Remove garlic, and mash with a fork. Set aside.   4. Wash, peel, and cut your potatoes so that they’re all relatively the same in size. You can also give the potatoes a quick rinse after cutting, to remove excess starch. 5. Cover the potatoes with enough cold water to completely submerge them. Add hefty pinch of salt. Using high heat, bring to a boil and then reduce the heat to maintain a simmer until the potatoes are fork tender - about 30 minutes. 6. While the potatoes are cooking, add half and half to a medium sauce pan, along with thyme and rosemary. Warm the half and half, then remove from heat to let the herbs steep 7. Once potatoes are fork tender, drain the water and allow for potatoes to sit in the pot for 2-3 minutes to dry out. Using a potato ricer, process the potatoes. 8. To the potatoes, add butter and mix until the butter has melted. Remove herbs from the half and half, and incorporate it into the mashed potatoes, 1/2 cup at a time, until it gets to the consistency that you prefer. 9. Mix in the garlic confit into the mashed potatoes. Add black pepper and mix. Taste the mashed potatoes and add garlic salt/salt (one pinch at a time) according to your pallet. 10. Serve with gravy of your choice and top with finely cut parsley or chives.

Peel and wash potatoes. Cut into large chunks and place into a pot. Fill pot with cold water, making sure potatoes are completely submerged with water. 2. Bring to a boil, add better than bouillon chicken base, and stir. Slightly cover with lid leaving a little space for the vapour to come out and bring heat down to a small boil. 3. Allow potatoes to cook 15-20 minutes or until fork tender. Drain and set potatoes aside. 4. Meanwhile, to a small saucepan add butter and milk, allow the butter to melt and the milk to warm up, dont boil. 5. Pour the butter and the milk into the potatoes, followed by the heavy whipping cream and season with Kinder’s Buttery Steakhouse Seasoning. 6. Use a hand mixer to whip the potatoes until creamy. Taste and season with salt if needed. Whip everything together one last time before transferring to a platter. 7. Garnish potato with chives and pour some melted butter over it.
