LENTIL SMASHBURGER TACO INGREDIENTS: 1 Can of Lentils, drained and rinsed 1/2 of an Onion 1/4 of a Red Bell Pepper 4-5 White Mushrooms 1/2Cup of Gluten-Free Oats 2 tbs of Ketchup 1 tsp each: Salt Pepper Smoked paprika Dried thyme Garlic powder Onion powder Nutritional yeast Tortillas Burger sauce 1/3 cup vegan mayo 3 tbs ketchup 1 tbs mustard 2 tbs sweet relish Squeeze of lemon INSTRUCTIONS Add your peppers, onions and mushroom to a food processor. Pulse until all is roughly chopped and around the same size. Sauté this mixture in a pan over medium heat until most of the moisture has cooked out (optionally sprinkle salt to draw out more water). Remove from pan and set aside. In a small food processor add the oats and spice and blend until roughly combined. Then in a large bowl add the lentils, cooked veggies, blended oats and ketchup and mash to form the patty mix and it holds shape. Form patty on a tortilla and cook patty side down and optionally add a weight on top to keep it flat. Flip after about 3-5 mins, add cheese and steam to melt. For burger sauce add all ingredients in a small bowl and mix. Recipe: 1 tbsp olive oil 2 cloves of garlic, minced 1/2 shallot, finely diced 1/3 cup crushed tomatoes, more if needed 1/4 cup water 15 oz can of pre-cooked lentils, drained and rinsed (about 1 + 3/4 cups cooked lentils) ~1/2 bag of frozen cauliflower rice (mind was a mix with bell peppers) 1 packet of taco seasoning Handful of baby spinach Tortillas (cassava flour, almond flour, or regular flour) Cheese of choice Preheat oven to 450°F and line a large baking sheet with parchment paper. Heat a large deep skillet over medium heat. Stir in olive oil, garlic, and shallot. Cook until fragrant, 30-60 seconds. Slightly reduce heat, then stir in crushed tomatoes, water, lentils, cauliflower rice, and taco seasonings. Break up frozen cauliflower rice and stir until everything is well combined. Stir in spinach. Allow to simmer for 5 minutes. If you want the mixture to be a bit saucier, add an extra splash of the crushed tomatoes. Remove lentil mixture from heat and lay the tortillas on the baking sheet and set in the oven for 1 minute to gently heat them. Remove from oven and place 1/2 square of cheese in each shell (optional), then scoop about 1/4 cup of the lentil mixture in each taco. Fold the taco shells over the mixture and gently press. Bake for 10-15 minutes, until crispy.
