GLAZED LEMON POUND CAKE LOAF 🍋 I perfected my lemon poundcake recipe and it’s finally here. #deats 3 eggs 1/2 cup granulated sugar 2 tsp vanilla 1/4 tsp lemon extract 3.5 tbsp butter 1/4 cup greek yogurt Zest of 1 lemon 3/4 tsp baking powder 1 cup all purpose flour Glaze: 1 cup powdered sugar 1 tbsp heavy cream 1 tbsp lemon juice Preheat oven to 340 degrees. Boil water in a small sauce pan and after it comes to a boil, set it aside. In a bowl whisk together your sugar, lemon and vanilla extract. Then after its whisked, put the bowl on top of the saucepan so the heat is right below the bowl. Continue mixing. Let the mixture come to about 743 F. Set aside Then in a small bowl, add in your butter, yogurt and lemon zest and put on top of the sauce pan again. This time let it sit until it melts Go back to your egg mixture and with a hand mixer, mix until it becomes a light fluffy texture. It should be, fluffy, creamy and slightly runny. Just right before a stiff peak forms. Sift in your flour and baking powder. Fold with spatula Your butter mixture should be completed melted and warm. Add some of the batter into the butter mixture and fold until its all well incorporated. Then mix and fold the whole thing together Pour the whole mixture into a small loaf pan and bake for 40-45 min!
