I am *not* a fan of most extracts. I avoid any lemon extract in my lemon cakes by adding the zest of like 5 large lemons to my sugar and letting it sit for at least half an hour prior to finishing batter. The oils in the zest release into the sugar and it’s a game changer for any citrus cake!

LEMON POUND CAKE (made from scratch) Bakers Baking Spray (for the pan) 1 ½ cups unsalted butter 3 cups sugar 5 large eggs 5 large eggs ¼ cup lemon juice 1 tablespoon vanilla 3 cups all-purpose flour ½ teaspoon baking powder ½ teaspoon salt 1 cup milk ¼ cup sour cream THE GLAZE 3 tablespoons lemon juiced. 3 to 4 ups cups confectioners’ sugar (glaze should be smooth) 1 Tablespoon sweet cream ½ teaspoon vanilla   COOKING TIME: 1hr 10 min COOKING TEMP: 350 degrees   1.Spray pans with Baker’s spray and set aside. 2.Sift flour into a bowl then add in baking powder and salt the mix together. 3.Add butter and sugar together and mix in mixe r for 8 minutes until fluffy. 4.Crack eggs in a separate bowl to make sure there  is no blood then add to the mixture one at a time. 5.Scrape bowl down to ensure it mixes properly. 6.Add in the lemon juice and vanilla. 7.Add in the flour and milk. Alternate starting with the flour and end with the flour. 8.Lastly add in the sour cream. 9.Give it a good mix with your spatula to make sure it’s all mixed in then pour it into your desired pans. 10.Pop it into the oven for 45 minutes then checks  (for rising and browning) leave it in for about another 15 to 20 minutes then stick a toothpick in the center  to see if it comes out clean. If it doesn’t, place it back  in the oven checking on it every 10 minutes until it comes  out clean. Depending on how your oven cooks the total cooking time should not be more than. An hour and 10 minutes.It’s a process so be patient. Remove from oven let it cool for about 10 minutes and then add the glaze.
