Lemon brownies from heaven. Note: For this recipe, you need at least 4 lemons in total. Brownies - 1 stick of butter, melted and cooled - 1/2 cup white sugar - 1/3 cup powdered sugar - 2 eggs - Zest and juice from two large lemons - 1 tbsp vanilla extract - 1 cup of all-purpose flour, sifted - Pinch of salt Icing - 1.5 cups powdered sugar - Juice from 2 large lemons - Zest from 1 lemon for garnish To prepare brownies: 1. Using an electric mixer, mix together the butter and sugars until well-combined. 2. Add in eggs, lemon juice, lemon zest, and vanilla extract. Mix again until well-combined. 3. In a separate bowl, combine salt and flour. Sift the mixture into the brownie batter. 4. Gently stir in the dry ingredients (don’t use the electric mixer for this part). 5. Pour batter into a greased, parchment lined 8x8 baking dish. 6. Bake at 350 degrees F for 15-17 minutes or until set. 7. Allow to cool at room temperature for 30 minutes, and then place in the fridge for an hour. To prepare icing: 1. Using an electric mixer combine powdered sugar and lemon juice. Add more juice or more powdered sugar to adjust consistency. It should have the consistency of melted chocolate. 2. Pour icing onto the fully cooled/chilled brownies. Cut into squares and enjoy!
