Note, this is not sweet (I prefer it that way and like to add sweetness like a drizzle of honey and warmed berries to each slice served to customize the sweetness per slice). Main Ingredients: - 4 eggs, separated - 1 1/2 cup greek yogurt - 1/2 cup egg white powder (not egg white protein powder) - 1 tsp baking soda If you want it sweet, add in: - 1/2 cup coconut sugar or 1/4 cup honey or maple syrup Flavor variations add: - vanilla extract - cinnamon - lemon zest / juice Topping options: - strawberries - honey - melted chocolate Method: Preheat oven to 350 F. Next, in a separate bowl, mix yolks, greek yogurt, and baking soda. If adding a sweetener and/or flavor variation, do this now into the yolk mixture. Gently fold the egg yolk mixture into the egg whites. Transfer batter into an 8" lined or oiled pan. Bake for 30 min. Turn off the oven, open the door slightly and let it cool in the oven for 15-20 min. (The cake will rise while baking, but sets back down when cooled).
