This is always a classic and always delicious. You can’t go wrong with this recipe! You’ll need: - 1 1/2 cups rice - 2 1/2 cups low sodium chicken broth - 2-3 skinless chicken breasts, cut into cubes - 1 can corn (and beans if you prefer) - 1 packet taco seasoning - 1 packet ranch seasoning - some chile powder, garlic powder, and any other spices you prefer - 3/4 of a salsa jar - any toppings your prefer You’ll need to do: - Spray bottom of InstantPot with nonstick spray (it’ll burn if you don’t) - pour 1/2 cup chicken broth in - put chicken in pot - sprinkle the taco seasoning, ranch packet, and spices - add corn - add salsa - add rice - add remaining 2 cups of chicken broth - press down rice to make sure everything is submerged - Manual Pressure cook for 8 minutes - release pressure once done - “fluff” with a fork - enjoy with toppings such as jalapeños, avocado, sour cream, etc. #food #cooking #dinnerrecipes #easyrecipes #chickenrecipes
