Day 1 of sharing my mom's recipes until our family cookbook, honoring her life is complete. Recipe below: Icebox Cookies: ▫️1 cup butter (I prefer salted) ▫️1 cup granulated sugar ▫️1 cup brown sugar ▫️2 eggs ▫️2 tsp pure vanilla extract ▫️4 cups self-rising flour ▫️1.5 cups chopped pecans 1. Preheat oven to 350 degrees. 2. Combine butter, sugar, and brown sugar and mix until light and fluffy. 3. Add eggs one at the time, beating well before each addition 4. Add vanilla extract 5. Scrape down the sides and bottom on the mixing bowl. 6. Slowly add flour, about a cup at the time, mixing well before each addition. 7. Scrape down sides and bottom of mixxing bowl. 8. Fold in pecans. 9. Turn dough out on to a long piece of parchment paper and roll to form a log, twisting each end of paper once formed. 10. Place dough in freezer and chill for at least an hour. 11. Slice dough rounds 1/2" thick snd place on a parchment lined baking sheet. Leave space for cookies to spread while baking. 12. Bake at 350 degrees for approximately 10 minutes (depending on how your oven heats) The cookies should look almost underdone, light on top, and a light tanish brown color on bottom. Cool completely and enjoy. 12.
