Ingredients: 1 tbsp olive oil 3/4c red onion 1tbsp minced garlic 1 can chickpeas rinsed and drained 2c cherry tomatoes 1c diced zucchini 16 oz orzo 5 cups water 1c frozen peas 2c chopped spinach 22oz pre cooked chicken (I used the pollo asado from Just Meats) . Instructions: 1. In a large pot on medium heat, sauté onion, garlic, tomatoes, zucchini and chickpeas for a few minutes. 2. Pour in the orzo and water 3. About halfway through cooking add peas, spinach & chicken 4. This should take about 10 minutes! Taste orzo when the liquid is absorbed and make sure it’s tender to your liking. 5. We love a one pot pasta around here for a cozy easy delish dinner RECIPE (serves 4) 3 tbsp butter, divided 1/2 of an onion, finely diced 3–4 cloves of garlic, minced 1 + 3/4 cup bone broth (can sub veggie broth) 1 + 1/2 cups whole milk, plus more for finishing sauce 8 oz pasta of choice (gluten free, if needed) 1 head of broccoli, cut into small florets 1/3 cup parmesan cheese, plus more for serving Salt + pepper, to taste 1. Heat a large pan over medium-low heat. Add 2 tbsp of the butter and onion. Cook, stirring occasionally, for 5 minutes. 2. Stir in garlic, then add broth and milk. Stir everything, then bring to a boil. 3. Once boiling, add pasta and return to a boil. Cook for 3 minutes. 4. Stir in broccoli, salt, and pepper, and cover the pan, leaving a slight opening to allow some steam to escape. Cook until pasta is cooked to your liking (mine took 5 minutes). 5. Reduce heat. Stir in 1 tbsp of butter and the parmesan. Add more milk as needed 1 tbsp at a time until sauce reaches your desired creaminess.
