Mediterranean Inspired Chicken Bake Meal Prep 👨🍳 This single serve glass bowl meal prep is so easy and such a time saver!!
Making it perfect for meal prep. I highly recommend you give it a go 🤤 Ingredients (for one serve): 50g x raw basmati rice 🍚 150g x lean boneless chicken breast (diced) 75ml x chicken stock
50g x greek yoghurt
1-2tbsp seasoning (I used @Mingle Seasoning greek garlic seasoning) Cherry tomatoes Zucchini Red onion 15g x feta cheese Optional toppings when serving: Greek sauce or tzatziki Fresh parsley Method: Preheat the oven to 180 Degrees Celsius. In a glass meal prep container add your rice, chicken, stock, greek yoghurt and seasoning. Give it a good mix and add all of your veg. Give it another mix and finally top with your crumbled feta cheese. Cover with alfoil (if you like - I didn’t because we ran out) and bake in the oven for around 45-55 minutes or until it’s cooked! Let cool and store in the fridge! Optional: when serving add greek sauce and fresh parsley! Enjoy 🤤 Calories: 465 Protein: 47g #mealprep #chickenbake
