Bibingka season na! Try this soft and tasty special bibingka with macapuno. Topped with salted eggs, cheese, and grated coconut. Ingredients: 1 1/2 cup rice flour 1/2 cup glutinous flour 1/2 cup sugar 1 tbsp baking powder 1 tsp instant yeast 1/2 tsp salt 2 eggs 400ml coconut milk 1/2 cup water 1/2 cup macapuno Toppings: Cheese Salted egg Margarine Grated coconut Directions: -Preheat oven to 200C -In a large bowl, combine rice flour, glutinous flour, sugar, baking powder, yeast, and salt. Whisk until well-combined. -Add coconut milk and water. Whisk until smooth. -Add macapuno then mix. Cover and let it rest for 30 minutes. -Wipe the banana leaves to remove the dirt, then quickly heat over the stove for a few seconds. -Line the molds with banana leaves. Trim the excess leaves around the edges. -Pour the batter into each molder up to 3/4 full. Top with salted egg. -Bake in a preheated oven at 200C for 15 minutes. -After 15 minutes, remove from the oven.Top with sliced cheese. Then bake for additional 10 minutes. -Broil the bibingka for about 2 minutes until golden brown. -Once done, transfer to a wire rack. Let it cool for 5 minutes. -Brush each bibingka with margarine or butter.
