Quick and Easy Steak Fajitas- perfect for dinner or any occasion, these are everyone’s favorite 🤩 Ingredients: 1 thick cut ribeye or any steak of choice 1 red bell pepper 1 yellow bell pepper 1 red onion 3 tbs olive oil 1 tsp salt, or to taste Black pepper, to taste 1 tsp taco seasoning 1 tsp @hippypilgrimgarlicsalt chili lime seasoning, optional 1/2 lime, juiced Charred Tortillas, for serving (about 8 small ones) Guacamole, for serving Lime, for serving Method: 1. Wash and cut peppers into strips; slice red onion and sauté in 2 tbs of olive oil until charred season with salt, pepper and taco seasoning; set aside; 2. Slice steak into strips, add 1 tbs of olive oil into the same pan, add steak; season with salt, pepper, taco seasoning and chili lime seasoning, cook until desired doneness; bring peppers and onions into the pan; squeeze lime and mix; 3. my best ever chicken fajitas Once I tried this method to make my fajitas I can never go back. My chicken fajitas with lime and honey yoghurt are the best I have ever made but still so simple. Chuck everything into one pot, season with your spice mix and bake. Toast your tortillas so they have a little char and load everything up. You will need to serve 2-3 at 210kcal and 20g protein per fajita 2 chicken breasts 1 red pepper, sliced 1 green pepper, sliced 1 red onion, sliced Small whole wheat tortillas 2 tbsp of any fajita spice blend 150g thick yoghurt 1 lime 1/2 tsp garlic granules 1 tsp honey Avocado and fresh coriander to serve Optional cheese for those who want it! Pre heat your oven to 190c fan. Slice your peppers and onion. Place into an oven proof baking dish. Lay the chicken breasts on top. Cover with the spice blend, a good pinch of salt, and a drizzle of olive oil. add a slice of lime on top of the chicken and bake for 25 minutes, then remove and allow to rest for 5 minutes. Mix together 150g yoghurt with the juice of 1/2 a lime and the zest. Add 1 tsp honey and a pinch of salt. Taste and adjust if needed. Slice your avocado and chop some coriander. in a hot dry frying pan, lightly char your tortillas. The little dark bits add great flavour (but don’t burn them) Remove the chicken from the peppers and mix the vegetables to combine all the flavours. slice the chicken and place it back on top of the peppers. Serve family style, loading up the toasted tortilla with the peppers, chicken, fresh avocado and lime yoghurt. Sausage Fajita Pasta Full Recipe - Ingredients & Instructions are below and on my blog •1 Pound Rigatoni Pasta •2 Tablespoons Olive Oil, or neutral cooking oil of choice •1 Pound Smoked Sausage, Beef or Turkey, sliced into 1-inch pieces •2 Tablespoons Unsalted Butter •½ Medium Red Onion, sliced •½ Red Bell Pepper, or whole pepper, sliced •½ Green Bell Pepper, or whole pepper, sliced •Pinch of Salt, for onions & bell peppers •3 Cloves Garlic, minced •1 Tablespoon Tomato Paste •3 Cups Heavy Cream •½ Cup Chicken Broth •½ Teaspoon Kosher Salt, or to taste •2 Teaspoon Black Pepper, or to taste •1 Teaspoon Garlic Powder •1 Teaspoon Cumin •1 Teaspoon Italian Seasoning •1 Teaspoon Smoked Paprika •½ Teaspoon Chili Powder •¼ Cup Pasta Water, from cooked pasta •1 Cup Parmesan Cheese, shredded •Italian Parsley, minced Instructions: •Cook Rigatoni Pasta according to packaging. I recommend boiling 1 Pound of Pasta in 4 Quarts of Water with 2 Tablespoons Kosher Salt until Al-Dente (about 8-10 minutes). Save some of the pasta water that was used to boil the pasta for later steps. •In a skillet on medium heat, add in sliced smoked sausage and cook for about 1-2 minutes on each side. We’re looking to brown the sausages on each side. Once sausage is done cooking, remove from the skillet and set aside. •For our sauce, in the same skillet that was used to cook our sausage, add in butter. Once butter is melted, add in sliced onion and cook for 1 minute. Next, add in red bell pepper & green bell pepper. Add in a pinch of salt, and cook for another minute. Then, add in minced garlic and cook for about 30 seconds. •Mix in tomato paste & chicken broth, and bring to a simmer. Begin to scrape up bits at the bottom of the skillet. •Add in heavy cream and mix in with ingredients well. Add in salt, black pepper, garlic powder, smoked paprika, chili powder and Italian seasoning and mix in well. Continuously stir sauce, slightly turn up heat, and bring sauce to a high simmer. •Once the sauce is at a high simmer, slightly reduce heat and add in ¼ cup of pasta water from cooked pasta. Mix in well, and simmer sauce for about 10 minutes to thicken. •Remove sauce from heat and let cool for about 2 minutes to continue to thicken. Next, mix in parmesan cheese. Then, toss in cooked pasta and sausage. Sprinkle on Italian parsley and additional parmesan cheese if you would like. Enjoy! #royaleeats
