Vanilla Cream Filled Donuts☁️🤍دونات بالفانيلا للعجينة: ( المقادير لـ 15 حبة ) (كل المكونات باردة من الثلاجة❄️) 250 جرام طحين 00 كابوتو 25 جرام سكر 3 جرام ملح 5 جرام خميرة فورية 5 جرام فانيلا طبيعية 1 بيض كبير ( 50 جرام ) 140 جرام حليب 25 جرام زبدة للفانيلا باستري كريم ( Vanilla Pastry Cream ): 250 جرام حليب 110 جرام كريمة خفق 35% نصف عود فانيلا 2 صفار بيض ( 40 جرام ) 25 جرام سكر 25 جرام نشا الذرة 60 جرام شوكولاتة بيضاء 25 جرام زبدة 25 جرام كتلة جيلاتين ( 5 جرام جيلاتين بودرة مذابة في 20 جرام ماء ) للتحضير: في قدر اغلي الحليب والكريمة والفانيلا. في وعاء اخلط صفار البيض والسكر والنشا، اسكب الخليط الاول في الخليط الثاني بالتدريج، اطبخ الكاسترد لمدة 2 دقيقة حتى يثقل، اضف عليه الشوكولاتة البيضاء واخلط ثم الزبدة واخلط وأخيرًا الجيلاتين، باستخدام الهاند بلندر hand blender نخلط حتى يصبح الكاسترد ناعم ولامع، يبرد في الثلاجة على الأقل 4 ساعات.. نخفقه قليلًا قبل الحشو!🤍 لتحضير العجينة: في وعاء العجانة نضيف الدقيق، السكر، الملح، الخميرة والفانيلا ونخلطهم، ثم نضيف البيض، الحليب، والزبدة. نعجنهم على سرعه منخفضة لحد ما تمتزج المكونات ويختفي الدقيق ثم نقفل ونتركها 30دقيقة، بعد كذا نشغّل العجانة ونعجنها على سرعة عالية لمدة 7-10 دقائق. لحد ما تصير عندنا عجينة مطاطية ولامعة وقويّة😍. نتركها ليلة كاملة 12ساعة بالثلاجة أو إلى 24ساعة، مهم للبريوش الناجح يكون تخميره بطيء (يتخمر بالثلاجه). اليوم التالي نطلع العجينة من الثلاجه ونخرّج الهواء منها ثم تشكل وهي باردة لقطع صغيرة وزن الحبة 30-35 جرام. نكوّرها ونرصها بصينية فيها ورق زبدة. نغطي عليها ونتركها لمدة ساعة ونصف الى ساعتين حتى يتضاعف حجمها. يسخّن الزيت بدرجة حرارة 165 مئوية، نقلي الدونات كل وجه دقيقة ونصف إلى دقيقتين. قلّبته في سكر بالفانيلا نحشوها بحشوة باستري كريم بالفانيلا وبالعافية🤍
