Southwest Steak Bowl 🥩🔥 This right here will not disappoint! Easy, healthy, packed with flavor and can be done in under 30 minutes. Definitely will be a new staple in my routine & I bet after you make it, it will be a staple for you too! 🤝 FULL RECIPE ⬇️ INGREDIENTS - ~1.5 lbs steak of of choice (I used top sirloin) - 2-3 tbsp of avocado oil - Southwest Style seasoning of choice (I used Moms Gourmet Wow-a Chihuahua Seasoning) - Cooked Jasmine Rice Toppings (optional) - Avocado slices - Chopped Cilantro Corn & Black Bean Salsa (Combine all ingredients) - 1 cup yellow corn (strained and rinsed) - 1 cup black beans (strained and rinsed) - 1/2 of a red onion finely diced - 1 jalapeño finely diced - 1/2 cup finely diced tomatoes - 1/2 cup fresh chopped cilantro - ~2 tbsp fresh minced garlic - Juice of 1 lime - Salt to taste Sweet Creamy Chipotle Sauce (Mix all ingredients together) - ~1/3 cup light sour cream - ~2/3 cup fat free plain greek yogurt - ~3 tbsp of @TABASCO BRAND Chipolte Sauce - ~1.5 tbsp of @Siete Foods Chamoy sauce - ~1.5 tbsp of honey - ~1 tsp Garlic powder Note(s): Adjust ingredients to your liking. DIRECTIONS 1. Prepare the corn and black bean salsa by combining all of the ingredients above. Place in fridge till ready to serve. 2. Prepare the creamy sweet chipotle sauce by combining all of the ingredients above. Place in fridge till ready to serve. 3. Cut steak into cubes then add to a large bowl. Drizzle in avocado oil and season heavy. Mix till welll combined. 4. Cook the steak in large greased skillet over medium-high heat for 6-8 minutes. Mix every few minutes until done to your liking. 5. Steak Foil Pack Recipe⬇️🥩 UPDATE: I have been getting comments that the lean stew meat should be baked for 1 hour and 30 minutes- 3 hours! With @emilyreyes__ So it can get tender I guess this type of meat is usually cooked longer a but l would say if you use lean meat cook meat for 1 hour ish by itself then after 1 hour add your broccoli, corn, & potatoes and cook tor 1 hour so total around 2 hours & but if you end up using rib eye you will be fine with 1 hour plus rib eye smacksss🔥 I cut Baby Dutch Yellow potatoes in half I used about 174g . Place foil on countertop, make sure it’s a good size so you can fold it right. Then I added about 7.41 Oz stew meat lean. Spray some avocado oil spray and Season steak with lemon pepper, minced garlic, onion powder, garlic salt and I used about 24g of light butter scattered throughout the foil pack. Add more butter for juicier texture. Season corn with butter and garlic salt Season broccoli with avocado oil spray and garlic salt. In oven cook at 350 for about 1 hour or more so it can get tender !. Towards the end you can open the foil pack for faster cooking. Then once it’s ready add your fave cheese. I used reduced fat fiesta blend cheese and place it on top of potato and close the foil and let it cook in the oven for an extra 2-3 minutes . This HONEY - LIME chicken is the perfect weeknight dinner to add to your rotation🍋‍🟩🍯 Ingredients: 1 chicken breast thinly sliced Seasoned with: Paprika Chili powder Salt & pepper 1 lime juiced 2 tbsp honey For the Cucumber & Avocado Salad: 1/2 cucumber quartered 1 avocado cubed 1/2 red onion sliced 1 tosp honey Salt & pepper to taste 1 lime juiced Minced cilantro For the sides I made white rice and added 1/2 cup to my plate and approximately 1 cup of shredded lettuce. This dinner was SO good I can't wait for you to give it a try 🙌🏼 Notes: slice chicken breast. Season the chicken. On a medium pan on (medium heat) add 1/2 tbsp avocado oil then add chicken once the pan is very hot. Cook for about 3-4 minutes until no longer pink. Turn heat down then add lime juice and honey. Allow for it to simmer for another 3-4 min or until sauce turns thick in texture. For the salad cut the veggies add all into a bowl and mix well. FULL RECIPE ⬇️ INGREDIENTS ~1.5 lbs Yukon gold potatoes - 1 lb lean ground beef (Used 93/7) - Extra virgin olive oil - Taco Seasoning of choice (I used @Grillin With Dad's) Pico De Gallo (Combine all ingredients) - 1 cup fresh diced tomatoes - 1/2 cup diced red onion - 1 small jalapeño diced - (Remove seeds unless you want it spicy) - 1/2 cup chopped cilantro - Juice of 1/2 a lime - Salt to taste Guacamole (Combine all ingredients) - 2 medium sized avocados - 1/2 cup diced red onion - Juice of a lime - 1/2 cup cilantro chopped - Garlic powder to taste - Salt to taste Note: The measurements are estimated. Adjust ingredients to your liking. Addition toppings: - Shredded Cheese - Sourcream - Cilantro DIRECTIONS 1. Prepare the Pico and guacamole then set in fridge. 2. Wash & dry the potatoes then dice them up into small cubes. Put them in a large bowl then add in olive oil and taco seasoning. Mix till well combined then place evenely on a lined baking sheet. Bake at 425 for ~30-35 minutes. Give a quick mix half way. 3. While the potatoes are in the oven, prep your ground beef. Add the ground beef to a greased large skillet over medium-high heat. Break it up then add in taco seasoning. Mix and add more if needed. I also like to add a bit of water or broth for extra moisture. Cook for 8-10 minutes mixing frequently until done to your liking. 4. Remove potatoes from oven and let cool for a few minutes. 5.
