CRAWFISH MAC & CHEESE Ingredients: 1 cup elbow pasta 12oz crawfish tails Olive oil 1/4 cup milk 1/2 cup cream cheese 1/2 cup mozzarella 1/2 cup sharp cheddar 1/2 cup colby & Monterey jack cheese 6 tbsps unsalted butter 1 shallot (diced) 3 garlic cloves (minced) 2 tbsps red pepper flakes 1 tbsp old bay 2 tbsps creole seasoning 1 tbsp smoked paprika 1 tbsp black pepper 1 tbsp garlic powder 1 cup fresh cilantro Method: 1. Cook your elbow pasta. In another pot add 3 tbsps of unsalted butter, a generous drizzle of olive oil and 2 tbsps red pepper flakes. Keep on low flame and swirl until it bubbles then turn off flame. 2. In that same pot add the crawfish tails, 2 tbsps red pepper flakes, 1 tbsp old bay, 2 tbsps creole seasoning, 1 tbsp smoked paprika, 1 tbsp black pepper, 1 tbsp garlic powder, 1 cup fresh cilantro and mix. 3. Cook crawfish on med flame for about 10 minutes. Then on low flame add 1/2 cup water, bring to a simmer, turn off and let rest with lid on. 4. In a large pot on med flame add 3 tbsps unsalted butter, a drizzle of olive oil, 1 diced shallot and 3 minced garlic cloves. Once golden brown on low flame add 1/4 cup milk, simmer, add 1/2 cup cream cheese, the crawfish water from the other pot (just the water trust the process) and wisk. 5. After whisking turn off flame and slowly start adding the cheeses. Once you’re done add your crawfish, elbow pasta and a sprinkle of cayenne pepper seasoning (optional). Note: Turn the flame on low every now and then while whisking the cheese to avoid lumps. If your cheese happens to get lumpy just add a dash of water. If it becomes too runny sprinkle in a little of all purpose flour. The key is to wisk continuously at a medium speed.
