Cold Pasta Salad

PASTA SALAD I’m typically all about warming, hearty meals in the winter time but I make an exception for pasta salad. This is a cold dish I love having year round! It has a great balance of carbs, protein and fat; it’s so simple to prep, and tastes absolutely delicious! It’s also easy to customize, if there’s an ingredient you don’t have on hand, or don’t care for, it can be omitted or swapped with a similar ingredient. Hope you enjoy! Ingredients: 1 8oz box of @eatbanza rotini pasta drizzle of EVOO dash of salt & pepper 1 cup grape tomatoes, halved 1 cup bell peppers, diced 1 cup red onion, diced 1 cup english cucumbers, quartered and sliced 1/2 cup celery, diced 1 can garbanzo beans, drained and rinsed 1/2 cup cilantro, chopped 1 cup salami, cubed small 1/2 cup parmesan cheese, cubed 1/2 cup asiago cheese, shredded 1/2 cup parmesan cheese, shredded Dressing: 1/4 cup EVOO 3 tbsp red wine vinegar 2 cloves of garlic, minced 3 tsp oregano 1/2 tsp salt 1/2 tsp black pepper Directions: Cook pasta to al dente according to box instructions Toss pasta in EVOO, salt and pepper Add the remaining ingredients and drizzle with homemade dressing or store-bought Italian dressing of your choice Toss to combine and enjoy! *store in the fridge in an airtight container for up to 5 days! #pastasalad #chickpeapasta #easydinner #easylunch #healthymeals #mealprep #15minutemeals #sidedish #highprotein #healthyfat #oliveoil #glutenfree #refinedsugarfree #recipeideas #simplerecipes #easyrecipes #foodreels #foodvideo #healthylifestyle #columbusohio
