Welcome back to Chickpea Friday, where I share new ideas for that can of chickpeas in your pantry 🎉 In today's edition of Chickpea Friday, we're making crunchy chickpea parmesan crisps! With just four simple ingredients, these protein-packed bites are perfect for snacking, topping salads, or sneaking onto a charcuterie board. 1. Prep Chickpeas: Preheat your oven to 375°F (190°C). Drain and pat dry 1 can of chickpeas, then spread them onto a rimmed baking sheet. Drizzle with 1 tsp olive oil and toss to coat evenly. 2. Bake Chickpeas: Pop the chickpeas into the oven and bake for 15 minutes, or until they start to crisp up. Don’t turn off the oven just yet. 3. Add Flavors: Remove chickpeas from the oven and sprinkle with 1 Tbsp ranch seasoning. Toss them to coat. Scoot the chickpeas closer together on the baking sheet and cover them with 2 to 3 oz finely grated parmesan. 4. Finish Baking: Return the baking sheet to the oven for another 7 to 10 minutes, until the cheese is melted and crispy. Let it cool before breaking into pieces. 5. Roasted Chickpeas 🤪 This protein packed snack is super easy to make and so flavorful! highly recommend trying them out 😍 Ingredients - chickpeas rinsed and drained - olive oil - salt - garlic powder - onion powder - paprika - italian seasoning Preheat oven to 350°F. Wash and drain your chickpeas. Dry them with a paper towel. Once dried, add olive oil and salt. Put them on a baking sheet with parchment paper and cook them for 22-25 min. Once done, put them back in a bowl to add rest of seasonings. Put them back into the oven for another 10 min. 🌶️ crispy gochujang chickpeas 🌶️ you’re not gonna wanna sleep on this recipe trust me. Using @boldbeanco (of course) and took a lil inspiration from their new cookbook which I highly recommend 💪. To make: 1 jar/can of chickpeas Olive oil Salt 1tbsp Gochujang paste 1tbsp soy sauce 1tbsp rice wine vinegar 1/2tbsp sesame oil 1tbsp agave or maple syrup 1 clove grated garlic Grated ginger To serve: Spring onions Sesame seeds Rice Lime -drain your chickpeas and pat them dry -on a baking tray, add your chickpeas with some olive oil and salt -bake in the oven at 180 for about 35-40 mins until crispy -make your sauce by mixing all the ingredients (I added the ginger and garlic to the pan first so there was no remnants of raw flavours) -add sauce to pan on a low heat and then add your chickpeas -serve over rice with spring onion, sesame seeds and lime juice Enjoy x #vegan #plantbased #healthy #veganfood #veganrecipes #noodles #asianfood #tofu #foodie #tantalisingtofu #koreanfood #gochujang #spicy #chickpeas

(available on Amazon & all good book stores 👀) I’m not suggesting this recipe replaces the classic blondie but it’s a great sweet snack thats packed with fibre, plant-based protein and whole food ingredients 🤝 Don’t knock them till you try it! 😙 ingredients ✨1 tin of chickpeas, rinsed WELL and drained ✨125g smooth peanut butter (tahini works well too!) ✨90ml of maple syrup (or honey) ✨pinch of salt ✨2-3 TBSP milk ✨1 tsp baking powder ✨60g dark chocolate chips method 1. preheat the oven to 200c 2. grease & line a small square or round cake tin. 3. add all the ingredients except the chocolate chips to a blender (add the milk last to achieve desired cake batter consistency) 4. stir in the chocolate chips 5. Bake for 15-18 minutes - drizzle extra chocolate & pb on top if you wish. 6. slice when cooled and stor in an airtight container for 5 days #chickpeas #chickpeablondies #viralrecipes
