When I say it was sooo hard for me and my hubs not to sit up and eat this whole pan in one sitting lol. This “Marry Me” Chickpea Dip is AMAZING! S/O to @Delina Gray for the inspiration to make this 🫶🏾 Ingredients: 1 tbsp plant butter 1/2 a yellow onion, diced 4 garlic cloves, minced 1 jar of sun-dried tomatoes, drained 2 15oz cans of chickpeas, drained and rinsed 10oz bag of frozen spinach 1 @knorr vegetable dip seasoning packet @iamtabithabrown Very Good Garlic Seasoning dried basil dried oregano vegan mayo vegan cream cheese vegan parmesan vegetable broth dairy-free mozzarella How it all comes together: Sautee onion, garlic, and sundried tomatoes in plant-butter in a large rimmed skillet until fragrant and starting to soften (about 2 minutes) Add in chickpeas, seasonings, spinach, vegan mayo, vegan cream cheese, and vegan parmesan, and mix well to combine. Once mixed, pour in 1/2 cup of vegetable broth at a time until it reaches your desired, dippable consistency (I didn’t measure as I was pouring, but would guesstimate I used a little over a cup) Transfer mixture to an oven safe dish and top with dairy-free mozzarella cheese, making sure to spray with a little cooking spray or spritz a little water/broth over the top of it so it can get as melty as possible Bake at 400 degrees Fahrenheit for 15-20 minutes until hot and bubbling. 🥖 we enjoyed ours with a sliced up warm French baguette but I bet this would be fye with some pita chips, pretzels crisp, or even as a pasta sauce too! #vegancooking #whatveganseat #chickpeas #plantbasedrecipes #plantbasedtiktok #cookingvideos
