Kale Pasta Caesar Salad!😍 Welcome to episode one of seriously good salads! Today we’re making a kale pasta caesar salad with crispy chickpeas and a creamy caesar dressing🤌🏻. Feel free to customize this Salad any way you like by adding some veggies, grilled chicken etc. Full recipe is below and don’t forget to tag @choosingchia if you make it!🤍 KALE PASTA CAEASR SALAD 🌿 Crispy smoked chickpeas * 1 can chickpeas (15 oz) * 1 tbsp olive oil * 1/2 tsp smoked paprika * 1/4 tsp sea salt Caesar dressing (vegan friendly! And promise it tastes just as good!!) * 2 tbsp olive oil * 4 tbsp lemon juice * 2 tbsp tahini * 1 tbsp dijon mustard * 1 garlic clove * 1 tsp nutritional yeast * 1/4 tsp salt * 1/4 tsp pepper * 4 tbsp water Salad *8oz pasta *1/3 cup parmesan cheese *Shredded kale (about 5 cups chopped) Instructions: Crispy smoked chickpeas Preheat the oven to 375 degrees F. Drain & rinse the can of chickpeas and then place on a baking pan between two paper towels. Roll the chickpeas in the paper towels and remove as much water as possible. Some of the skins will come off the chickpeas, discard the skins. (This will make the chickpeas crispier!) Drizzle olive oil, liquid smoke and sea salt on the chickpeas mixing with your hands or a spoon until evenly coated. Bake for 30-40 minutes.
 Caesar dressing Blend the olive oil, lemon juice, tahini, dijon mustard, garlic, nutritional yeast, salt, pepper and water together in a blender until smooth.

It has a great balance of carbs, protein and fat; it’s so simple to prep, and tastes absolutely delicious! It’s also easy to customize, if there’s an ingredient you don’t have on hand, or don’t care for, it can be omitted or swapped with a similar ingredient. Hope you enjoy! BUFFALO CHICKPEA PASTA SALAD JARS Ingredients: 2 cans chickpeas, drained and rinsed 1 can white beans, drained and rinsed 1 can corn 3 red bell peppers, diced 5 stalks celery, diced 4 large carrots, diced 1/2 a red onion, diced 2/3 cup reduced fat feta cheese Dressing 1/2 cup nonfat Greek yogurt 1/2 cup buffalo wing sauce 2 tbsp ranch seasoning (I just buy the ranch dip packets) 1 tbsp lemon juice 1/4 cup water to thin Instructions: 1. Dice all your veggies and add to a large bowl along with beans, corns, and feta. 2. Whisk together dressing ingredients (adding more water 1 tbsp at a time to thin if needed). Enjoy, my entire family loved this one! - - - Ingredients: Veggies: 10 oz chickpea pasta 1 chopped bell pepper 1 cup chopped cucumber 1/2 cup shredded carrots 1/3 cup green onions, diced 1 cup chopped cabbage Sauce: 1/2 cup peanut butter 1 tbsp maple syrup 1 tsp apple cider vinegar 1 tbsp coconut aminos or soy sauce 1/4 cup water Instructions: Cook the noodles according to package instructions. Rinse and let cool. While the pasta cooks/cools, chop your veggies you’ll also want to make the sauce here. In a small bowl, combine the sauce ingredients and whisk together until smooth When the pasta is done cooling, add to a bowl also with the chopped veggies. Pesto protein pasta salad This recipe makes 4 jars I just ate one before filming it oops. Ingredients: 4 servings protein pasta I used @barilla protein pasta 1 can chickpeas, drained and rinsed 1 large cucumber, diced 1 orange bell pepper, diced 1 red bell pepper, diced 1/2 a red onion, diced Pesto dressing 1/4 cup nonfat plain Greek yogurt 1/2 cup pesto (I used Trader Joes vegan kale pesto) 2 tsp lemon juice 2 tbsp unsweetened almond milk to thin Instructions: 1. Cook pasta according to package instructions and set aside to cool completely. 2. Dice all your veggies, then whisk together dressing ingredients (adding more milk 1 tbsp at a time to thin if needed). 3. Distribute ingredients amongst 3-4 jars (this will depend on how big your jars are) starting with dressing then add bell pepper, cucumber, chickpeas, red onion, and lastly pasta. Cook pasta according to package instructions and set aside to cool. 2. While pasta cooks chop all your veggies then add them to a large bowl. 3. Then add cooled pasta, chickpeas, cheese, mayo, vinegar pickle juice, yogurt and seasonings. Toss together until well combined. Adjust seasonings according to taste preference. 4.
