Broccoli Rice Casserole 4 cups white rice (I use 2 success boil in a bag rice) Follow package instructions. 12 ounces of broccoli ½ stick butter ½ of a large onion diced 1 tsp garlic paste. 1 tsp garlic powder 1 tsp onion powder 8 oz Coby, Monterey Jack Cheese (shredded) 8 oz sharp cheddar cheese (shredded) ½ cup sour cream ½ can of cream of chicken and mushroom soup 1 can broccoli and cheddar soup 1 cup milk 1 tbsp parsley to the top for color   Bakes: 5.5 casserole dish Bake temperature: 350 degrease. Baking time: 45 to 50 minutes or until it’s golden brown     Cook boil in the bag rice as instructed on the box. Or whatever rice you like. This recipe calls for 2 cups of rice. It doesn’t matter what kind as long as it’s 4 cups. Add about 4 cups of water or chicken broth (if you want to add more flavor) to another pot and add in the broccoli. Cook the broccoli until tender about 3 minutes. Remove the broccoli from the water and onto a paper towel. Discard the broccoli water and place the pan back onto the stove on (medium heat). Add in the butter and onions. Sauté the onions until they are translucent in color then add in the garlic paste, garlic powder and onion powder. Then add the broccoli back into the pan. Use your spatula to chop the broccoli to your liking.  Reduce heat to simmer. Then add in the sour cream, rice, cream of chicken and mushroom soup, broccoli and cheddar soup, ½ of the Coby and Monterey Jack, sharp cheddar cheese and milk. Give that a good stir. When the cheese is all melted pour the mixture into your casserole dish then top with the remaining cheeses. Bake on 350 degrease for about 45 minutes or until it’s golden brown. Here is the recipe: 20 ounces chopped, frozen broccoli, thawed 16 ounces Velveeta cheese 1 canned cream of mushroom soup 1 can cream of chicken soup 2 cups of uncooked, white minute rice One stick of butter 1/2 medium onion, diced Salt, pepper, garlic powder, and onion powder to taste Melt the cheese and the butter in separate bowl. Combine the butter with the cheese, along with soups, chopped onion, seasonings, and rice. Microwave for two minutes and then combine mixture with broccoli. Mix well. place in a 9 x 13 pan and bake at 350° for 30 minutes.
