BLUEBERRY CRUMBLE BARS RECIPE 🫐 CRUST 1 1/2 cups (191g) AP flour, sifted 1/4 cup plus 2 Tbsp (42g) powdered sugar, sifted (plus extra for top) 1 tsp baking powder 1/4 tsp fine sea salt 3/4 cup (170g) unsalted butter, softened Line an 8” x 8” baking pan with parchment paper, overlapping the ends a couple of inches. In a medium bowl, whisk together flour, powdered sugar, baking powder and salt. In a large bowl, beat butter until smooth. Add flour mixture just until combined. Press dough into prepared baking pan. Bake until surface looks golden brown, about 20-25 minutes. Meanwhile, prepare topping and filling. 🫐 TOPPING 1 cup (128g) AP flour 1/3 cup (66g) packed brown sugar 3 Tbsp sugar 1/4 tsp cinnamon 1/4 tsp fine sea salt 6 Tbsp (85g) cold unsalted butter, cubed In a medium bowl, combine flour, brown sugar, sugar, cinnamon and salt. Work cold butter into flour mixture with a pastry blender or with your fingers until the mixture looks like wet sand. Press together to make 1/2” chunks. 🫐 FILLING 3 1/2 cups (454-510g) blueberries 1 tsp lemon juice 2/3 cup (132g) sugar 2 tsp cornstarch In a large bowl, toss blueberries with lemon juice. Mix in sugar and cornstarch. Pour blueberry mixture over warm crust. Top evenly with crumble mixture. Return to oven and bake until topping is golden brown and filling starts to bubble, about 28-33 minutes. Let cool.
