GARLIC EGGPLANT 🧄 (Chinese inspired 🇨🇳) I’ve never been a big fan of eggplant but actually it’s all about the preparation! 😋 Much love Maya ✨ RECIPE (4 servings, 30min prep time): -2 eggplants Cut in big chunks. Add a generous amount of salt and let it sit for 10mins. Drain, wash and pat dry. -2 Tbsp oil Fry in oil until they become soft and charred, then remove from the pan. -3 cloves garlic -a thumbsize piece of ginger -2 spring onions Finely chop everything, then fry for 2mins before adding the eggplant again. Sauce: -4 Tbsp soy sauce -4 Tsp sugar -2 Tsp corn starch -some water to thin it out Mix and add to the eggplant. Stir and cooked 1-2mins until thickened. - KNOBLAUCH-AUBERGINE 🧄 (chinesisch inspiriert 🇨🇳) Ich war nie ein großer Fan von Auberginen, aber eigentlich kommt es nur auf die Zubereitung an! 😋 Viel Liebe Maya ✨ REZEPT (4 Portionen, 30 Minuten Zubereitungszeit): -2 Auberginen In große Stücke schneiden. Gut salzen 10 Minuten lang ziehen lassen. Abtropfen lassen, waschen und trocken tupfen. -2 EL Öl In Öl anbraten, bis sie weich sind, dann aus der Pfanne nehmen. -3 Knoblauchzehen - ein daumengroßes Stück Ingwer -2 Frühlingszwiebeln Alles fein hacken, dann 2 Minuten braten, bevor die Aubergine wieder dazu kommt. Soße: -4 EL Sojasauce -4 TL Zucker -2 TL Maisstärke -etwas Wasser zum Verdünnen Mischen und zur Aubergine geben. Sichuan-Style Eggplant Ingredients * 20oz eggplant * Neutral oil for frying * 1/2 inch knob ginger(minced) * 4 cloves garlic(minced) * 3 scallions(sliced) * Salt * 1.5 tbsp Doubanjiang * 3 tbsp Shaoxing wine * 1/2 cup stock or water * 1 tsp light soy sauce * 1 tbsp Chinese black vinegar * 4 tsp sugar * 1 tsp cornstarch+1 tbsp water * 1 tsp sesame oil Instructions 1. Prep ingredients by cutting eggplant into 3 inch pieces and seasoning with salt to draw out the moisture. Let that sit to dry brine while you mince garlic and ginger, and slice scallions. 2. Pat the eggplant dry then deep fry at 375F in batches for 3-4 minutes until lightly golden brown and the skin is bright purple. 3. Remove the eggplant and pour out most of the oil saving 2-3 tbsp. 4. On medium high heat, sauté the white portion of scallions, garlic, and ginger along with doubanjiang until fragrant(2-3 minutes). 5. Deglaze with Shaoxing wine and once most of the wine has evaporated, add stock/water and season with soy sauce, Chinese black vinegar, and sugar. 6. Bring to a simmer and add the eggplant. 7. Gently combine before adding a cornstarch slurry to thicken. 8. As many of you know, my husband doesn’t like eggplant, so I make this dish alllll for myself. It’s self care. This recipe is inspired by 魚香茄子 (fish-fragrant eggplant) and it’s truly one of my faves! I use Chinese or Japanese eggplant for this dish because the seeds aren’t tough and those varieties of eggplant aren’t bitter. You’ll need: 1 pound (454g) Chinese or Japanese eggplant 3/4 cup (175mL) canola or any neutral oil 1/2 cup (120mL) water 1/4 teaspoon cornstarch 2 teaspoon red Sichuan peppercorn 2 tablespoons minced garlic 1 tablespoon minced ginger 2 tablespoons doubanjiang 1 1/2 teaspoons gochugaru 2 teaspoons sugar ½ teaspoon (2g) kosher salt sliced scallions + toasted sesame seeds for garnish You can get the full recipe with notes, air-frying, steaming, and pan-frying eggplant directions on my blog!
