Tip: Meal prep soup on the weekend for quick, balanced lunches or dinners throughout the week! #ad @Milk Soups are the perfect vehicle for a nutritious meal, especially when you add vegetables (for fiber) and dairy milk (for protein and nutrients)! You can also freeze leftovers to reheat within a few weeks. Zuppa Toscana soup recipe (makes 4 servings): ⁃ Sauté 1 lb spicy Italian sausage in a large pot over medium heat for about 7 min, or until fully cooked. ⁃ Transfer cooked sausage to separate plate. ⁃ Add 2 tbsp olive oil to the pot and 1 large diced yellow onion. Sauté for about 5 min or until softened. ⁃ Add 4 minced garlic cloves for 1 min and then 1 lb cubed russet potatoes, 6 c chicken broth, and cooked sausage. Simmer for 20 min. ⁃ Add 1 cup whole dairy milk (I use lactose-free milk) and 4 cups of chopped kale and let simmer for 5 min. ⁃ Mix together 2 tbsp cornstarch with 1/4 c of cold water for a constarch slurry and stir into soup. ⁃ Salt and pepper to taste (you’ll likely need a few tsp of salt)! #soupseason #soup #mealprep #gonnaneedmilk
