Dominican Red Beans 🇩🇴 Full recipe ⬇️ Red beans and rice is one of those things our ancestors from Africa brought with them to the Southern States like Louisiana which became a very big important part of the agricultural scene at the time and it helped to keep our traditions alive! And even today beans and rice is one of the most consumed foods in the world! This is Red beans The Dominican Way of course, and enjoy! . . Im using red Dominican beans pero you can use pinto beans or my favorite beans Roman beans or even black beans, whichever beans you prefer! You can soak overnight and they won’t take 2 hrs to soften. I boil it with a tiny bit of vinegar and olive oil Once soft I drain the beans and reserve that water. In your pot: Tablespoon of olive oil Big spoon of sofrito Tablespoon smashed garlic (or 1/2 tbsp of garlic paste) Half a red onion, green bell pepper, red bell pepper and Italian pepper Half a tbsp tomato paste (make sure to dissolve) Add your beans mix then add reserved water as needed Caldo de pollo or chicken bouillon to taste 1/4 of a whole auyama (West Indian pumpkin or calabassa) When auyama is soft smash or blend If it’s too dry add more water Season with: 1 teaspoon sazón & adobo 1 teaspoon Dominican oregano 1 teaspoon smoked paprika 1 teaspoon black pepper Tapatio (a lil bit of my uncle) hot sauce (optional) Taste and if it needs a tiny bit more salt add it Let boil for a good 20 mins then turn off Add fresh cilantro and let sit at least 20 mins to thicken And Enjoyy!!! . . .
