I am absolutely smitten by the Pierre de Ronsard! This climbing rose, also known as the 'Eden Rose', is a true spectacle of nature. Roses pannacotta with their syrup 🌹 👇🏻Recipe x 2 ppl 👇🏻 • Ingredients: 3 roses from the garden (without pesticides) - the variety you see in the video is called "Pierre de Ronsard" 1/2 lemon juice 200 ml water 200 gr sugar 150 ml milk + 150 ml fresh cream 2 soaked gelatine leaves 👉🏻 Harvest the roses in morning time, the perfume will be more intense at this time of the day. Remove the petals and remove any insect. Boil the water and put it on the petals.Let it macerate in the fridge for 12 hours.Strain the liquid, add sugar. Cook for 10 minutes at medium fire, obtaining roses syrup. Add milk and cream in a pot with 50 ml of syrup. Heat up, remove from the fire and add gelatine. Put the mix in the Fiore mold, then freeze for 4 hours. Once done, remove the roses pannacotta (let defrost 15 mins before service) and finish with roses syrup, candied roses (find the video recipe in previous video), yoghurt dots. Roses jam 🌹🍞 👇🏻Recipe👇🏻 • Ingredients: 300 gr garden roses grown without pesticides - the variety you see in the video is called "Pierre de Ronsard". Please note: all roses are edible as soon as they're grown without pesticides or chemicals. 300gr Sugar 300ml water 2 lime juice 👉🏻 Harvest the roses in morning time, the perfume will be more intense at this time of the day. Remove the petals and bugs. Clean the petals from the white part then mix them with your hands with 50% of sugar mixed with lime juice. Meanwhile, bring to boil the water and the rest of sugar, cook for 10 mins. Put the roses petals in the pot with the water and sugar an cook at medium fire for 40 mins. Once ready, rest in the fridge for 3 hours. Put your jam in sterilized jars and store in a dry and dark place for 1 year.
