Spicy Vodka Pasta with Crispy Pancetta 🍝 I finally perfected my vodka sauce recipe, and it’s absolutely divine. I used @Banza🍕🍝🫘 to get that extra protein and fiber (which we could all use around the holidays) #BanzaPartner Here’s how to make it: 2 tbsp butter 1 tbsp olive oil 1 medium yellow onion, sliced Salt, to taste Water 1lb Banza Rotini 8-12 oz pancetta, cubed 1 tbsp calabrian chili paste, to taste 1 tsp oregano 2-3 cloves garlic, grated 6.5 oz tomato paste ½ cup vodka 1 cup cream 1 cup freshly grated parmesan cheese Freshly torn basil 1. In a large pan, melt 1 tablespoon of butter and 1 tablespoon of olive oil over low heat. Add your sliced onion, a pinch of salt, and a splash of water. Stir frequently, adding small splashes of water as needed to prevent burning. Cook for about 1 hour and 10 minutes, until the onions are soft, tender, and pale golden. Set aside. 2. Bring a large pot of salted water to a boil. Cook your pasta until al dente, drain, and rinse with cold water immediately to stop the cooking process. Set aside. 3. Add the pancetta to a cold pan, then bring the heat to medium. Cook until golden and crispy, about 7-10 minutes. Remove from the pan and leave about 1 tablespoon of the leftover fat. Let the pan cool off a bit. 4. In the same pan, over medium-low heat, add the prepared onion soubise followed by Calabrian chili paste and oregano. Sauté for 2-3 minutes. 5. Grate in the garlic and stir. Cook for about 30 seconds until fragrant. 6. Make a small space in the center of your pan, add the tomato paste, and let it cook undisturbed for 2-3 minutes. Then incorporate it with the onions and garlic, stirring for another 1-2 minutes. 7. Pour in the vodka, stir, and let it simmer for a few minutes until the alcohol cooks off. 8. Reduce the heat to low and pour in the cream. Stir to combine, and season with salt to taste. 9. Add the remaining tablespoon of butter, parmesan cheese, and a splash of pasta water. Stir until the sauce begins to look silky. 10. Add the freshly torn basil, pancetta (reserve some for garnish), and pasta to the sauce. Stir gently until the pasta is fully coated in the sauce. 11. Serve and top with extra parmesan cheese, extra pancetta, and fresh basil. Recipe down below! spicy Rigatoni Pasta topped with crispy breaded chicken Everything you’ll need: (1 box or bag) Rigatoni 1 small can of tomato paste (6oz) 1 small carton of heavy whipping cream (1 pint) 1 onion Minced garlic 2 tablespoons Butter 2 chicken breasts (5 slices) Breadcrumbs Parmesan cheese All purpose flour 3 eggs How to bread your chicken: Get 3 bowls, in one on your bowls add 3 eggs and whisk together. In your second bowl add 2 cups of flour with 1/2 teaspoon black pepper, 1 teaspoon salt, 1 tablespoon paprika, and garlic. Finish with 1 teaspoon of Italian seasoning. Mix that all together. In your third bowl, add 2 cups of breadcrumbs, add the same seasonings and measurements as our flour. Add Parmesan cheese as well. 1/4 cup. Get your chicken and start with your flour. Press it into both sides of your chicken. Then put your chicken into your egg wash. Make sure to evenly coat. Lastly, put your chicken into your breadcrumbs mixture. Be sure to press those breadcrumbs into to ensure evenly coated. How to cook your chicken: To a pan, add enough oil to cover the bottom of it. You want shallow oil. Once your oil is hot, add your chicken in. Don’t flip until that side if golden brown. Flip and repeat. If you feel like you need to cook your chicken longer double check with a meat thermometer. 165 degrees Fahrenheit means your chicken is cooked. Remove and add to a plate or sheet pan lined with paper towel. How make cook your rigatoni pasta: To a pot fill it 1/2 water. Add 1 tablespoon salt of your choice. Allow your water to come to a boil with the LID ON. Add your rigatoni pasta into your boiling water. Cook your pasta for 12 minutes for perfectly al dente. How to make your pasta sauce: To a deep pan, add oil, 1 chopped onion. Allow to cook for 3 minutes, add in 1 tablespoon minced garlic. Add 2 tablespoons butter. Then add your small can of tomato pasta, mix well. Put your heavy whipping cream in. Mix all together. Lastly, season with 1 tablespoon of red pepper flakes (change this according to your spice preference), 1/2 tablespoon black pepper, 1/2 tablespoon salt, 1/2 tablespoon Italian seasoning, 1 tablespoon paprika, and 1 tablespoon garlic powder. Creamy spicy vodka pasta wirh crispy chicken 🍝🤍 Full recipe below! Ingredients - 1 medium yellow onion, diced - 5 cloves garlic, minced - 1 1/3 cup heavy whipping cream - 1 can (6 oz) tomato paste - 1/3 cup vodka (optional) - 4 tbsp tbsp olive oil - 3 tbsp butter - 3 tsp red chili flakes (adjust to spice level) - 2 tsp dried basil - 2 tsp dried oregano - Salt and pepper to taste - 2/3 cup freshly grated Parmesan - Fresh basil, for garnish Chicken - 3 chicken breasts, butterflied - 1 cup flour - 3 large eggs, beaten - 1 cup panko bread crumbs - 2 tsp garlic powder - 2 tsp onion powder - 2 tsp dried oregano - 1 tsp dried basil - 1 tsp paprika - Salt and pepper to taste Instructions - In a large mixing bowl add pieces of butterflied chicken breast. Add olive oils, spices, and mix until evenly coated - Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, shaking off excess. Dip in the egg, then coat in breadcrumbs. Press lightly to make sure it’s coated - In a large pot or skillet, heat up neutral oil on medium high heat. - Add the breaded chicken to the skillet. Cook for about 6-7 minutes or until golden brown through. Remove and place on a wired rack and add salt. - Place chicken into a 280F-300F oven to keep warm while cooking pasta - In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta - In a large saucepan add olive oil over medium heat. Sauté onions until translucent. Add minced garlic and sauce until fragrant. Add tomato paste and cook until deepened in color. Add vodka, mix until combined. Simmer for 4 minutes then add in red pepper flakes - Lower the heat and stir in the heavy cream. Let the sauce simmer for an additional 5 minutes, stirring occasionally. Add seasonings, Parmesan, and mix until well combined. Add butter allow it to melt and mix well. - Add the drained pasta to the sauce, mix to evenly coat pasta.
