Majadara rous is an excellent Middle Eastern, vegan dish that is gluten-free. It’s perfect for those who need a meal prep idea and it served both hot and cold. 😌 Ingredients 5 large chopped large onions 1/2 c @mina olive oil 2 c parboil, long grain rice 3-4 c large brown lentils 1 tbsp salt 1/2 c olive oil 1 c corn oil 2-3 slices onions for garnish Begin by sautéing your onions till they are golden brown. You can cook them a little darker so that they can have a more dark rich onion flavor. In the meantime, soak your rice for about 15 minutes. In a large pots, add 6 cups of water and bring to a boil. Washer, lentils, and add them to the boiling water. allow your lentils to boil for 10 minutes before adding the rice. if you are using the large brown lentils, you can cook your rice and your lentils at the same time. The smaller lentils will need to boil for a longer time. 10 minutes after boiling your smaller lentils, add your rice. Cook the rice and the lentils for about 10 to 15 minutes before adding your onions. Don’t forget to wash and strain your rice. Once half of the liquid is absorbed by the rice and lentils it is time to add the onions. Add a little more water if needed cover and simmer for about 15 to 20 minutes. Fry your sliced onions and strain in a paper towel. Serve in a platter topped off with your fried onions and enjoy. in the Middle Eastern culture, we eat this with a salad or some yogurt which includes a cucumber and yogurt salad.
