Lasagna Roll ups 12 sheets lasagna pasta 1 lbs ground beef 1 lbs Italian sausage 1 medium carrot, small dice 1 large celery stick, small dice 1/2 medium onion, small dice 6 garlic cloves, pressed or grated 2 tbs unsalted butter 1 tsp cooking oil 2 Tbs tomato paste 2-15oz can tomato sauce 1-15 oz can diced tomatoes 1 1/2 tsp Italian seasoning 1 1/2 tsp garlic powder 1 1/2 tsp onion powder 1 tsp salt, divided , more to taste 1 tsp black pepper, divided 1/2 tsp sugar 1/2 tsp crushed red pepper flakes 1 cup mozzarella cheese, shredded 1 cup Parmesan cheese, shredded Parsley for garnish Ricotta Filling 15 oz ricotta 1 cup mozzarella cheese, shredded 1 cup Parmesan cheese, shredded 1 large egg 2 Tbs parsley, chopped 8-10 basil leaves, chopped 1/4 tsp salt 1/4 tsp black pepper 1. In a large saucepan, heat 2 Tbs butter and 1 tsp oil. Sauté garlic, onions, celery, carrots, and tomato paste over medium heat for 8 minutes, stirring often. 2. Add ground beef and sausage, season with 1/2 tsp salt and 1/2 tsp black pepper. Cook for 6-7 minutes, breaking up the meat. 3. Stir in tomato sauce, diced tomatoes, Italian seasoning, garlic powder, onion powder, 1/2 tsp salt, 1/2 tsp black pepper, sugar, and crushed red pepper flakes. Simmer covered for 25 minutes, stirring occasionally. 4. In a bowl, mix ricotta, 1 cup mozzarella, 1 cup Parmesan, egg, parsley, basil, 1/4 tsp salt, and 1/4 tsp black pepper. 5. Cook lasagna sheets according to package instructions, drain, and rinse with cold water. 6. Spread 1 1/2 cups meat sauce in the bottom of a 9x13 baking dish. 7. Lay lasagna sheets on a flat surface. Divide ricotta filling between the sheets, spreading it evenly but leaving 1/2 inch at one end. 8. Add 1/4 cup meat sauce down the center of each sheet. Roll up the lasagna from the filled end toward the space you left. Arrange in the baking dish, top with remaining meat sauce, and sprinkle with 1 cup mozzarella and 1 cup Parmesan. 9. Cover with foil and bake at 400°F for 35 minutes. Uncover and bake for an additional 10 minutes, then broil on high for 4-5 minutes until golden brown. 10. Let the lasagna rolls rest for 10-15 minutes before serving. Garnish with parsley.
